I look forward to making fresh juices during the spring/summer months. One of my all-time favorites is my watermelon juice. I typically do not add any sweeteners, and it's just so refreshing and yummy. I went on my normal monthly shopping trip, and I picked up a bunch of fruits and veggies. I originally picked up the cucumber to make a greek salad with. Unfortunately, while leaving out of the store, all of my cherry tomatoes fell in the parking lot. I was a little perplexed on what to do with the cucumber, and I decided to add it to my Pineapple Ginger juice to add a twice to one of my favorite summertime beverages. I'm so happy with how this recipe turned out.

Ingredients
- 1 Medium Cucumber (cleaned and chopped)
- 1 Pineapple
- 4 cups of water
- 2 tablespoons ginger
Instructions
Combine all ingredients in a high powered blender. Blend until combined. (strain: optional) enjoy over a cup of ice.
