My submission for Project 52. I captured this picture in my backyard with the Mister's camera and a remote (or timer) Seeing how it's jacket and even some days winter coat season. It's nice to look back on the beautiful days of summer.
Recipe Adapted from
4-6 Servings
Ingredients
- 1/2 tsp baking powder
- 1/4 tsp ground cinnamon
- 1/3 cup butter, diced into small chunks
- 1/2 cup flour
- 1/2 cup old fashioned oats
- 1/2 cup brown sugar
- 3 Tbsp milk
- 1/2 tsp vanilla extract
- 1/4 cup brown sugar
- 1/2 tsp ground cinnamon
- 2-3 large Granny Smith apples, peeled and sliced thin
- 3 Tbsp butter, melted
- 2 Tbsp flour
- 1 Tbsp lemon juice
- dash of salt
- Serve with Vanilla Ice Cream and caramel sauce

Instructions
- Preheat your oven to 375 degrees F.
- In a medium size bowl add the crumb topping ingredients listed above, with a pastry blender (or fork) until it resembles small crumbs. Refrigerate while you prepare the apple filling.
- Apple Filling: In a small bowl, combine melted butter and flour until well blended. Add the lemon juice, milk, vanilla and stir well. Stir in brown sugar, cinnamon, and salt. Pour butter mixture over apples and toss to coat.
- Pour apple mixture into an 8x8-inch baking dish and spread into an even layer. Sprinkle crumb topping evenly over the apples.
- Bake for 30-35 minutes or until golden brown.
- Remove from oven and allow to cool for about 10 minutes prior to serving.
- Serve with Vanilla Ice Cream and caramel sauce

Here is my submission for this weeks Project 52. I found myself as the camera lady for my sister's wedding back in August. She got married at our local rose garden which I love... The weather was perfect. Plus Mister and I were able to capture those magical moments.

Sharing some "Back to School" items I was able to snag during the summer sale at H&M. I'm not sure why it's so hard to "ball on a budget" while shopping for boys. However, I try my best to know when all of my favorite stores have sales. Since my little guy entered middle school last year, we had to sadly stop shopping at GYMBOREE. Even though he could still fit the clothing. I didn't want him to get teased (kids can be so mean no days)... Last year I had to re-introduce myself to H&M. To be honest, the transition to H&M has been awesome.. He loves the clothing and I love the prices. Anywho, check out my haul!
I can't believe we are midway in September (yikes) I could not let this month go by without sharing my August favorites. I hope you guys enjoy the video... This was my second time creating a video on my iMac and let's just say I had no idea what I was doing. In the past, I usually use my iPhone or iPad. However, I really thought I was doing something by using the Mister's T3i camera. Even though we have no idea of where the remote is... So we currently have a heatwave going on in Connecticut. Hence the Sangria ( just kidding). I really dislike when I waste food, and I took some shrimp out and never made them. Luckily for me, they were still fresh and ready to be prepared. Since most Shrimp and grits base is made with some type of pork (as seen in the video below). I just scratched that out. As always, I used what I had on hand. I pretty much had everything except for green onions, heavy cream ( I used half and half). Also, I prepared the grits as directed on the package. I added the shredded cheese to my liking, and allowed the cheese to melt.
Overall, this meal came out delicious and the sangria was just an extra bonus
Back to life, back to reality... So it's been two weeks since my baby started school. I am so proud of the way he is adjusting. I find myself implementing various routines that are working thus far. Since I don't eat meat, and everyone in my home is such a picky eater. I find myself cooking less, and less for my family. **sigh**

Here's my submission for #Project52. This picture was taken at one of our local beaches a couple of years ago. I can't believe that I haven't been to one beach all year ** faints**. Yes, I know... Even though I do not get in the water. It's some about how relaxing the beach atmosphere is.

Good Morning!
I can't believe we're already the first day of school 2015. Of course I had to snap a picture of this great moment. Can you believe that Michael is already in the seventh grade. Now that he's back in school I'm thinking of ways that I can make this school year super productive. If you follow me on periscope I did a little video yesterday about how I'm working on just various ways of making our morning more productive. One of the routines that I'm trying to implement is making sure his room is cleaned prior to leaving for school.
I'm trying to explain to him that the more stuff that he has to do after school is leaving him with less free time to do the stuff that he loves. I've learned that kids need lots and lots and lots of structure.
