I started eating a more plant-based diet almost three years ago, and the experience has really been life-changing for me. A lot has changed since I originally stopped eating meat almost eight years ago. A lot of the things that are accessible now, I would have to purchase online or at a specialty store in my area. I'm thankful now that most products I can find on a whim. I remember it took me forever to locate oyster mushrooms at my local grocery store and to be honest. It was worth the wait. A few years ago, Trader Joe's was built closer to my home, which has really made eating and cooking better a lot easier. I really enjoy trying new recipes and recreating some of my old favorites. It really does allow me to stretch my imagination, and simply just be creative. Below, I'm sharing my favorite vegan winter recipes. A lot of these recipes are on rotation in my home this winter.
