Vegan Pumpkin Spiced Donuts
Not sure when my love for pumpkin started. However, I know it wasn't my childhood. The closest we had to anything pumpkin was pumpkin seeds. My family just wasn't a fan of pumpkin treats. I think part of it is being a blogger. You really never know how much yummy pumpkin recipes are out there until fall. I mean. I've seen all types of pumpkin recipes from soups to puddings. Last year I made several pumpkin recipes, and I was in love with all of them. I think as a blogger, you naturally just fall in love with pumpkin everything if you love fall. However, I noticed that I never made pumpkin donuts before. I will say that I do not like my fall donuts sweet. Apple or pumpkin. I will also say that this recipe does not include any oils because my baking pan is fairly new and is nonstick and did not need it. Why add oils if they're not needed? Please feel free to grease your pan if you want to be on the safe side. I'm in love with the way that this recipe turned out. The next time that I make it, I plan on not adding any coconut sugar and using unsweetened applesauce. If you've been following my blog I love baking with applesauce. It's also an oil substitute as well as the banana. This recipe is healthy!! Though coconut oil is healthy, it's also pricey depending on where you purchase it from. Plus, I like to keep my recipes as simple as possible. This recipe makes 6 donuts and you should not have any batter left. I love the texture of this recipe and plan on keeping it in the rotation this fall.

Vegan Pumpkin Spiced Donuts Recipe
Ingredients
- 3/4 cup oat flour
- 1/2` cup pumpkin puree
- 1/2 mashed super ripe yellow banana
- 1/4 cup coconut sugar
- 1 tsp pumpkin spice
- 1/8 teaspoon Himalayan salt
- 1/4 teaspoon baking soda
- 1/2 teaspoon vanilla extract
- 2 teaspoons apple cider vinegar
Instructions
- Preheat the oven to 350ºF
- In a medium size, bowl combine all wet ingredients ( pumpkin, coconut sugar, banana, vanilla extract, and apple cider vinegar )
- Add all of the dry ingredients to the wet ingredients and combine ( oat flour, baking soda, pumpkin spice seasoning) combine
- Transfer the batter to a medium plastic bag (or a piping bag for frosting) and cut off one of the corners at an angle. pipe the batter into the donut pan. (no batter should be left in the bowl)
- Bake the donuts for about 18 to 20 minutes or lightly firm to the touch. Allow cooling for about 15 minutes before removing them from the pan.

Getting to be that time of year again when the pumpkin and pumpkin spice will start coming out everywhere. These vegan donuts look yummy.

ReplyDeleteOur family has always had a thing for pumpkin. I even make my own pumpkin puree! It is easy and so much more delicious than canned.
