Easy Homemade Cornbread

Growing up my mother would always make cornbread as a side dish for dinner whether she was making barbecue chicken or ribs or fried chicken. She always remembered a side of cornbread. She always used a boxed brand to make it, it was so convenient. I remember helping her make the batter eggs some milk in a little bit of oil. I remember her not even measuring, and she really had the mix down to a science. 
As an adult, I really don’t make cornbread that often. I always try to include cornbread on the menu when we have family gatherings and usually keep a box on hand. But typically never really make it as a side for my family. This past week I was in the middle of making dinner if you follow me on social media, I took you along on the journey. We needed an additional side and what came to mind was no other than cornbread. I searched my pantry and realized that I didn't have a box on hand. I knew cornbread would be a perfect side for the BBQ chicken that I was making. Though I didn't have any Jeffrey cornbread one hand, I did some quick research and I did have cornmeal on hand and was able to develop a recipe that I knew would be perfect for my family. 
To me the perfect cornbread has the perfect crest, it's not too sweet and it has the perfect texture. I’m so happy with how this recipe turned. It's super simple to make. I love that it can be made on a whim or even in advance. Just like the way mom makes it. I definitely added a layer of butter on top (this is definitely optional) but it does add a nice buttery flavor to the cornbread especially when it comes fresh out of the oven. Paired with your dinner, it is such a great treat. I remember my mom would slice in the cornbread and adding a little bit of butter in between like a Cornbread sandwich. Though I didn't do it this time around. My family still loved the recipe. So much so that my son snacked on it throughout the night and the next day. It was so yummy warmed up.

Recipe 

Ingredients | 12 servings
  • 1 cup yellow cornmeal 
  • 1 cup all-purpose flour
  • 3 1/2 teaspoons baking powder
  • 2/3 cup white sugar 1 teaspoon salt
  • 3 1/2 teaspoons baking powder
  • 1 egg
  • 1 cup milk
  • 1/3 cup vegetable oil
  • 2 tbsp butter (to grease the pan and to spread on top once it's out the oven. Optional)


Instructions
Preheat oven to 400 degrees F . Lightly grease a square cake pan.
In a large bowl, combine flour, cornmeal, sugar, salt, and baking powder. 
Stir in egg, milk and vegetable oil until well combined. Pour batter into prepared pan.
Bake in preheated oven for 20 to 25 minutes, or until a toothpick inserted into the center of the cornbread and comes out clean.
Spread a butter across the top of the cornbread once it's out the oven and, enjoy!

  1. Cornbread is something I usually make starting in the fall with all the chili and soups being eaten. I add fresh corn sometimes as well or jalapeños or other different stuff we might enjoy.
