Easy Roasted Basil Tomato Soup

Growing up I honestly don't remember my mom ever making tomato soup. However, if she had offered I would have declined the offer. Like most children, I was a picky eater. However, loved unhealthy foods. This didn't stop as a kid, my unhealthy eating habits actually transitioned into my teenage years and adult life with me. I honestly did not make the change to consistent healthy eating until last year. Of course, I've always loved certain fruits and veggies. However, I would mostly reach for the not so great stuff. This year I planted and harvested a bunch of tomatoes and basil, and I was inspired to use up the tomatoes prior to them going bad. I have a ton of tomatoes plants, so I knew prior to summer that I would probably batch cook some tomatoes soup and freeze it for the colder months.
Last week I had the craving for tomato soup. Yes, I could have gone to the store. However, with a ton of tomatoes on hand. Why not make a batch at home. I'm so happy that I decided to make this. I actually ate all of the soup for this recipe throughout that day. It was so yummy and fresh. I opted not to add cream to this recipe to make it vegan-friendly. I love that this recipe is diet friendly as well and it's so savory. I'm also happy that I found another great recipe to use my palm oil in. The Palm oil gave it such a great added flavor. I'm so happy that my taste buds have changed since my younger years. I really would have been missing out on this yummy soup.

Easy Roasted Basil Tomato Soup 


  • 2 tbsp Carotino Palm Oil
  • 8 medium-sized vine-ripe tomatoes of your choice
  • 1 medium yellow onion, sliced
  • 4 cloves garlic (do not peel garlic gloves )
  • 5-8 fresh basil leaves, plus more for garnishing
  • 1/4 tsp oregano optional
  • 1 cups water (or vegetable broth )
  • Himalayan salt, to taste
  • Black pepper, to taste
  • Parsely to taste


  1. Preheat your oven to 375 F.
  2. Brush a Silpat lined baking sheet with Carotino Palm Oil and set aside.
  3. Cut tomatoes in half and place cut side down on the prepared baking sheet.
  4. Place onions and whole garlic cloves ( keep the skin on ) on the baking sheet.
  5. Arrange everything in a single layer on the baking sheet.
  6. Place in oven and roast for 35-45 minutes.
  7. Remove from oven and allow to cool.
  8. Remove the skins of the tomatoes (to allow the tomatoes to blend well) 
  9. Peel the kinds off of the garlic and place in the blender along with all of the other on the baking sheet.
  10. Add spices (except for salt, black pepper, and parsley ) to the blender.
  11. Blend until smooth. ( My Vitamix blender has a soup option )
  12. Transfer mixture to a medium size pot.
  13. Stir in enough chicken broth just until your desired consistency is reached.
  14. Bring to a simmer until your desired temperature
  15. Season to taste with salt, black pepper, and parsley to taste.
