Easy Roasted Basil Tomato Soup

Last week I had the craving for tomato soup. Yes, I could have gone to the store. However, with a ton of tomatoes on hand. Why not make a batch at home. I'm so happy that I decided to make this. I actually ate all of the soup for this recipe throughout that day. It was so yummy and fresh. I opted not to add cream to this recipe to make it vegan-friendly. I love that this recipe is diet friendly as well and it's so savory. I'm also happy that I found another great recipe to use my palm oil in. The Palm oil gave it such a great added flavor. I'm so happy that my taste buds have changed since my younger years. I really would have been missing out on this yummy soup.

Easy Roasted Basil Tomato Soup

- 2 tbsp Carotino Palm Oil
- 8 medium-sized vine-ripe tomatoes of your choice
- 1 medium yellow onion, sliced
- 4 cloves garlic (do not peel garlic gloves )
- 5-8 fresh basil leaves, plus more for garnishing
- 1/4 tsp oregano optional
- 1 cups water (or vegetable broth )
- Himalayan salt, to taste
- Black pepper, to taste
- Parsely to taste
Instructions
- Preheat your oven to 375 F.
- Brush a Silpat lined baking sheet with Carotino Palm Oil and set aside.
- Cut tomatoes in half and place cut side down on the prepared baking sheet.
- Place onions and whole garlic cloves ( keep the skin on ) on the baking sheet.
- Arrange everything in a single layer on the baking sheet.
- Place in oven and roast for 35-45 minutes.
- Remove from oven and allow to cool.
- Remove the skins of the tomatoes (to allow the tomatoes to blend well)
- Peel the kinds off of the garlic and place in the blender along with all of the other on the baking sheet.
- Add spices (except for salt, black pepper, and parsley ) to the blender.
- Blend until smooth. ( My Vitamix blender has a soup option )
- Transfer mixture to a medium size pot.
- Stir in enough chicken broth just until your desired consistency is reached.
- Bring to a simmer until your desired temperature
- Season to taste with salt, black pepper, and parsley to taste.

Roasting everything always brings out the flavors so much more. With all the tomatoes I have from the garden this would be a perfect dinner idea. Can't wait to give this a try.
