Well over the weekend hubby and I had a conversation about a new television console. We have had the same console for over five years and it really needs to be upgraded. It is not solid wood, and it just needs to be replaced… I went to the store earlier today to see what goodies I could find. This particular store has items priced at 50% or more off of items that are scratched, overstocked or discontinued. I have the option of purchasing the items new at full price or 50% off with a minor flaw...

Hello & Happy Monday! I hope everyone had a fabulous, and productive weekend. Last week I decided to make this dish, we had all of the ingredients in our home. I have seen this recipe on several different restaurant menus, and I thought it would be nice to have something different for dinner. I did a goggle search and came up with this recipe by Rachel Ray, and I knew I had to try it. I followed the directions and in less than 15 minutes dinner was done. I opted to pair this dish with canned veggies (what happened to the fresh veggies is another story for a different day). Hubby absolutely loved this dish. The meal was so good to that he asked for me to make it again yesterday. Nothing was left the first time I made itJ.

I hope you are having a fabulous day! Last weekend, I came up with the conclusion that I really need to create to some type of home (or household) management binder.  At some point I would like to start keeping track of everything that my family is purchasing on our grocery list and the items that are not our grocery list. I would also like to start a weekend “To Do List” (pictured above). This list will be compiled of simply whatever needs to be done around our house over the weekend. I know with all of the technically now a days. I could simply put everything on my phone or computer… however, me just being me; I would prefer to have a hard copy right in my face!

I would love to know if you have a Household Management binder or do you have a weekend or weekly “To Do List”

Recipe Adapted From: via

4 boneless skinless chicken breasts, thawed
Pinch of salt
¼ Cup balsamic vinegar
¼ Cup extra virgin olive oil
8 slices mozzarella cheese

4 Tomatoes, seeded and diced
8 fresh basil leaves, stacked, rolled and thinly sliced into chiffonade
3 cloves fresh garlic, minced
Pinch of salt
1 Tablespoon balsamic vinegar

1. Preheat a grill pan over medium heat on the stovetop. Spray with cooking spray. Combine balsamic and olive oil in a bowl. Season both sides of chicken with pinches of salt and place on grill. Brush top sides of chicken with balsamic mixture. Cook for 4-5 minutes and flip chicken. Brush with additional balsamic and cook for an additional 4-5 minutes or until cooked through. During the last 2 minutes of grilling place 2 slices of cheese over top each chicken to melt.

2. In a large bowl combine the tomatoes, basil garlic, salt and balsamic. Toss gently to combine. Place chicken breasts on a serving plate and top with tomato mixture. Serve warm.

Did you receive any home décor magazines in the mail over the weekend (or this month)? I did, and I am super happy too! The best part about it was that all of the magazines were free! (I found a rebate on the back of a bake baking soda box for the Better Homes magazine, and mailed it out A.S.A.P. & I also saw a posting on Hip2Save) Another option is going to your local library if you are trying to cut cost and clutter. The library usually have pretty much all types of magazines.
