Coconut Curry Shrimp
Ingredients:
- 1 tsp olive oil
- 4 scallions, whites and greens separated, chopped
- 1 tbsp curry powder
- 2 cloves garlic, minced
- 1 lb shrimp, peeled and deveined
- 6 oz coconut milk
- 1/4 cup fresh basil, chopped
- salt (to taste )
In a large nonstick skillet, heat oil on medium-high. Add scallion (whites) and curry powder and sauté one minute. Add shrimp and garlic, season with salt and cook for 2-3 minutes. Add coconut milk, mix well. Simmer for 2-3 minutes, until shrimp is cooked through. Remove from heat, mix in scallion (greens) and basil.

This looks really good... maybe the next time my hubby is away I'll make it for myself (he can't stand curry, but I love it).

Oh yea I'm all over this recipe, lol. I once ate a coconut curry flavored dish at an Asian fusion spot and I've been hooked ever since :-)

Yummm!! That looks great, and so easy too! I have a go-to coconut curry shrimp recipe that I love, but this looks easier with fewer ingredients so I'll have to give it a try :)
