Vegan Fried Chick'n - Oyster Mushrooms
I'm not sure when I was introduced to oyster mushrooms. However, it's truly life-changing. For the longest time, I tried to locate oyster mushrooms at my local grocery store. Most of the Asian markets are known to have them and my local Whole Foods only sells the small packets. One day while shopping at my local Price Rite. I noticed that they had some in stock. I've been there several times after, and it's been pretty hit or miss. If you purchase a bunch of oyster mushrooms a little goes a long way. This is by far my favorite chick'n recipe. The oyster mushrooms really have a similar texture to chicken, and it's really so yummy.

Recipe
Ingredients
- Oyster Mushrooms
- Enough oil for frying (I use grapeseed oil)
- 1 1/2 cups wheat flour
- 1 tbsp tapioca flour
- 1 1/2 tsp Himalayan salt
- 1 tsp sugar
- 1 tsp ground black pepper
- 1/2 tsp onion powder
- 1/2 tsp basil
- 1/2 tsp ground ginger
- 1/2 tsp smoked paprika
- 1/2 tsp garlic powder
- 4-5 shakes of oregano to taste
Vegan Egg batter
- 1 cup Chickpea flour
- 1/2 cup water
Instructions
- Add enough oil to a frying pan and turn on to medium-low heat.
- In another bowl of medium size, begin mixing together the breading ingredients and set aside
- Split the oyster mushrooms to your desired size.
- Combine all remaining ingredients for the flour mixture
- Add the oyster mushrooms to the flour mixture
- Take the oyster mushrooms out of the flour mixture and dip it in the egg batter.
- Dip the oyster mushrooms back in the flour mixture.
- Now place the oyster mushrooms back into the oil.
- Allow the oyster mushrooms to cook for 2-3 minutes.
- Once the oyster mushrooms is fried, transfer to a plate with 3-4 layers of paper towels so that some of the oil can be absorbed from the oyster mushrooms.
- Allow them to cool for 4 minutes before serving.

I haven't ever tried this before. I'm sure I'd like it though. I tend to enjoy all fried food.
