Vegan Flourless Peanut Butter Cookies
One of my favorite treats is cookies. I love everything about cookies, especially indulging in them fresh out of the oven. Trust me, theirs nothing like warm cookies! However, I've been on the quest to create the perfect vegan concoction. One of the things I love best about creating recipes is actually the trail and error part. Trust me, when creating recipes, it's lots of trial and error. I'm happy to say that these cookies came out perfect the first time that I made them. Not only did they turn out perfect the first time. They were actually chewy the next day as well. The best part about this recipe is that it's a healthier alternative. No oils, sugars, or even flour! How cool is that?! This recipe is perfect to make on a whim or even bring to your next gathering. I try my best to always share with you guys a healthier alternative.

Recipe
Ingredients- 1 Flax Egg (Tablespoon ground flaxseed + 3 Tablespoons water)
- 1 teaspoon vanilla
- 1/2 teaspoon baking soda1/2 cup natural peanut butter
- 1/2 cup coconut sugar
Instructions
- Preheat the oven to 350°.
- Make the flax egg. Combine the ground flaxseed and water together in a bowl, set aside for about five minutes
- In the same bowl with the flax egg, add the peanut butter, coconut sugar, vanilla, and baking soda until well combined.
- Spoon 1 tablespoon of the cookie dough mixture, on a nonstick baking sheet. About 1 inch apart
- Bake for 9- 10 minutes. Remove from oven
- Allow to cool completely, and enjoy!

I have a couple of flourless cookies that my family enjoys. Will have to give this cookie recipe a try and add it to our list.
