Easy Stovetop Candied Pecans ( Vegan )
Can you please how fast the holidays are fast approaching? Christmas is almost 60 days away?! I know! I thought I would share one of my favorite holiday treats. I’m one of the biggest fans of candied nuts. One of my favorites is candied pecans. They’re super easy to make, and something about pecans just scream the holidays. I decided to try on a whim to make a vegan version of candied pecans and honestly. I ate the entire batch in one sitting. (remember, this is a judge free zone) This recipe is just that good, and it actually doesn’t require placing them in the oven. One less thing that you have to worry about trying to get in your oven rotation during the holidays. What I love about this recipe as well is that it can be made on a whim for those last minute gatherings and/or guest, and is also perfect to make last-minute to enjoy by yourself. They also great to keep on hand and top on your favorite treats like salads or ice cream.

Ingredients
- 1 tsp cinnamon
- 1/4 tsp cardamom spice
- 1 tbsp coconut oil
- 1 tbsp maple syrup
- 1 cup pecans
Instructions
- Place Silpat on a baking sheet. Set aside
- In a pan over medium-high heat, add the pecans, coconut oil, maple syrup, and spices.
- Stir everything together with a wooden spoon and heat for about 5 minutes, everything is completely combined, and nuts are coated. ( Continue to stir to avoid burning. )
- Transfer nut to the lined baking sheet, separating nuts.
- Allow cooling until hardened and place in a storage container for up to a month.
