Vegan Pumpkin Blondies
I'm always looking for new recipes to try, and I had a can of pumpkin puree, and I didn't want it to go to waste. To be honest, growing up we never ate too many recipes that called for pumpkin. My mom and family weren't the biggest fans of it. So naturally, as an adult, I didn't have any childhood recipes that called for pumpkin. The only childhood recipe I can recall us making is pumpkin seeds. Which is actually one of my favorite treats to snack on. I'm so happy that I decided to give this recipe a try. This vegan pumpkin blondie is super chewy, and divine. I can't wait to make this recipe again.
Vegan Pumpkin Blondies
1 Cup all-purpose flour.
½ 15 oz Can of pumpkin puree. About 1 cup.
1/2 cup of melted coconut oil or vegan butter.
2 Flax eggs.
1 1/4 Tsp of ground cinnamon.
1/3 Tsp of ground ginger.
¼ Tsp of ground cloves.
1/4 Tps ground nutmeg
1/4 Tsp of salt.
½ Cup of organic coconut sugar. You can also use regular sugar.
½ Tsp of baking powder.

Instructions
Preheat your oven to 375
Start by mixing your flax eggs, melted coconut oil, and sugar. Mix thoroughly.
Add your pumpkin puree and all your spices, then mix.
Now add your flour, salt, and baking powder. Start mixing very slowly so you don’t make a mess.
Once the mix is ready, move it to an 8x8 brownie pan (That you have previously covered with parchment paper).
Bake for 35 to 40 minutes.
Let completely cool down before you cut.
Cut, serve and enjoy.

These look delicious! I love pumpkin flavored desserts. I used to work in a Target and would be the pumpkin bread from Starbucks all the time. I will have to try these!
