Healthy Homemade Carrot Cake Bread

I'm a huge fan of carrot cake and it's actually one of the recipes that I've never made homemade before. I'm not really sure why. It's definitely a favorite in my home and a recipe that I look forward to making one of these days. When I'm in the mood for something I typically make it. I had everything on hand to make a carrot cake. However, I wanted to make a healthier alternative that would be perfect to enjoy in the mornings as well.  This recipe is super easy to make and is perfect for meal prep as well. Using oats flour makes this more of a bread consistency which is what I was going for. Plus, it gives it a really nice flavor. As you guys know, I'm a huge fan of all types of bread, and this carrot bread is one of my favorites.

Ingridendents 
  • 3 teaspoons cinnamon
  • 1/2 teaspoon nutmeg
  • 1 teaspoon Himalayan salt
  • 2 cups grated carrots, medium packed
  • Coconut oil to grease the pan 
  • 1/4 cup chopped walnuts (optional)
  • 1/2 cup unsweetened applesauce
  • 1 cup unsweetened almond milk
  • 2 teaspoons pure vanilla extract
  • 1/4 cup maple syrup 
  • 2 1/4 cups oats flour 
  • 3 teaspoons baking powder
  • 1 teaspoon baking soda

Instructions 
  1. Preheat oven to 350 degrees. Lightly grease loaf pan 
  2. In a large mixing bowl, beat together applesauce, milk, vanilla, and sugar.
  3. In a separate mixing bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Mix in dry ingredients to wet ingredients until just combined. Fold in carrots, and 
  4. Bake for approximately 40 minutes or until a toothpick inserted to the center of the cake comes out clean. Transfer to a wire rack and allow to cool 10 minutes before turning out to cool completely.
