Menu Plan Monday: Week of 2/13/17

How was your weekend? I spent most of the weekend indoors looking at vacation pictures. On Thursday we got about a foot of snow. It snowed again on Sunday and boy at that point I was really starting to second guess my decision to not relocate in 2012. Don’t get me wrong. The snow looks so beautiful all nice and fluffy. It really makes for some great family pictures. However, have you tried driving in that stuff? If you’ve never driven in the snow it is not fun at all. Every time I have to drive in the snow. I think about the time I asked my mom to go somewhere when we had a snow day and she was like heck no. Sigh, as a mom, I’m the same way, LOL. The fewer people that don’t like driving in the snow off the roads the better. Anywho, this week I had planned on making ziti twice. The plan was to make two batches at once and freeze the other batch. I opted to make the baked tortellini instead. This week I also decided to keep it simple. I wanted to create meals that if need be I could cook them in the crockpot or make them in advance. I don’t plan on trying any new recipes this week. Maybe some desserts, of course, I’ll keep you guys posted. You also probably noticed that our sides are pretty much the same. I purchased a huge bag of veggies from Costco or Bj’s (I think it was Costco) and with every meal, we’ll have a side of veggies. Oh, how I’m looking forward to having fresh veggies from my garden. Also, if you’re wondering what I’m going to have to eat. When I make the baked ziti I will probably make myself a pan of baked ziti without the meat. I also have a few sweet potatoes on hand so I plan on trying a loaded sweet potato recipe. I do have to go to the store this week to pick up a couple of items needed. So I may purchase some avocados and have an avocado tuna bowl as well and maybe a bean burrito. Maybe need to share next week what I typically eat in a week. I know when I first started out as a pescatarian it was really hard for me to eat healthy because I would just go with the foods that I was used to eating like french fries, cheese pizza etc. Now I try to be little more adventurous and not eat the same ole unhealthy stuff.

Monday: Cheese Tortellini bake with garlic bread

Tuesday: Garlic Ranch Chicken with Veggies and velveeta

Wednesday: Meatloaf with Mash potatoes and veggies

Thursday: The Best Chicken Legs Ever with sweet potatoes and rice

Friday: Pizza and Wings

Saturday: Fried Fish Sandwich and French Fries

Sunday: Baked ziti and Garlic bread

  4. I need to be better about my meal planning. I think it'd help save the stress I feel at the end of the day when I'm staring at so many unprepared groceries in the fridge!
