Happy Monday! I hope you had an amazing weekend! This past weekend I volunteered at an annual event that provides prom dresses to Foster and adoptive children. It always to so nice to see the excitement in the young ladies faces as they select their prom dresses. Saturday the weather was gorgeous in Connecticut. It was so nice to be outside and enjoy the weather. Michael had a workout meet on Saturday morning, so I was up bright and early. Last week I stopped by my local Ocean State Job Lot for some Kamut and Spelt flour. Unfortunately, my local store was sold out. However, I was able to find some while in the area of one of my favorite towns. I’m looking forward to creating some recipes with these items. I’ve made a spelt pizza dough in the past and it was nice to have a recipe for a healthier alternative. Below I'm also sharing another menu plan with me video. I hope you enjoy it!

I used to spend hours trying to figure out what I was going to make for dinner. It's so nice to have the peace of mind of already knowing what I'm going to make for my family. Happy Monday! I hope everyone had an amazing weekend. It's officially the countdown until my sons 16th birthday. I have so many mixed feelings about him getting older. It really feels like just yesterday that I was picking him up from daycare. It's really amazing how fast time flies. I found out last Thursday that I was specially selected to help document the 10-Year Anniversary of Alt Summit. This is my first time attending the ALT summit and I'm looking forward to connecting with the amazing women who plan on attending.

Happy Monday! I can't believe that Christmas is almost a week away. This past weekend was really busy with volunteering my time and doing some last minute holiday shopping. I was hoping to spend Sunday watching Christmas movies. However, I forgot that it's still football season, so hopefully, I'll be able to watch some of my favorite Christmas movies. This year my sister is hosting Christmas dinner at her house for the first year. I'm excited to spend the day with friends and family. This week I'm keeping our menu pretty basic. It's officially December, boy how November really flew by. My weekend was pretty low key. Micahel had practice and a game over the weekend. The weather wasn't the best on Friday and Sunday. I spent most of the weekend organizing my home and watching holiday movies. Their's something that I just love about Christmas movies and music. I really didn't take advantage of any of the Cyber Monday sales. I'm sure other great deals are going to pop up. I hope everyone had an amazing Holiday! Our holiday started with Michael having a Varsity game Thanksgiving Eve. I didn’t do much prep work the day before. However, I woke up early to cook dinner, which I was really pleased with myself because everything was ready before 1:30pm. I made small portions of some of my family favorites. I didn’t make a lot of desserts. Just pumpkin pies, and banana pudding.

I hope everyone had an amazing weekend. It officially feels like fall in my state. I can't wait to enjoy a warm cup of apple cider of course with whipped topping with a dash of cinnamon. It's my favorite! Our weekend was super low key. Michael had a couple of away football games which he was excited about. I didn't do much cooking this weekend though. Happy Monday! I hope you had an amazing weekend. We had absolutely gorgeous weather over the weekend. It’s bittersweet because it’s already starting to get dark sooner. My weekend was great though. Michael had a football game on Friday and Saturday. Which was so exciting, I love football so I'm all for it. I’m getting the hang of my Healbe tracker. It’s so convenient to have the information sync on my phone. I also participated in the Coastal Cleanup which was pretty cool. It’s always great to give back to the environment.

Happy Monday! I hope everyone had an amazing weekend! The weather was gorgeous in Connecticut. My week was super busy last week, so my menu plan was all over the place which is to be expected. My weekend was super laid back. I didn't do much. The Mister has a milestone birthday coming up and I'm still trying to figure out all of the details. Last week I shared a garden update. I'm so pleased with my garden this year. I still have a lot to learn. However, it's nice to see what I've learned in prior years put into action. I also shared tips last week on how to avoid putting on winter weight. I know it's summertime. However, winter is right around the corner.

Happy Monday! Last week I attended Sweet Suite and Baby Poolza in New York. I had so much fun at this event and was able to connect with so many amazing brands and influencers. This was my second year attending this event. I was so impressed, I honestly never considered my expectations from last year being over exceeded. Can't wait to share a recap from this event with you guys.
Ironically, prior to heading to New York, I prepped for dinner. Instead of putting the chicken in the crockpot. The Mister decided to grill the chicken instead. He raved about how yummy the chicken came out. It marinated for about eight hours prior to going on the grill. When I came home. There wasn't a bone in sight! Looking forward to recreating the meal again this week for them.

Happy Monday! I hope everyone had an amazing holiday weekend. I spent a good amount of time last week cleaning out our garage. I've noticed that our garage and front porch turns into a dumping ground during the winter time. I'm trying to change that habit and reorganize our space and get rid of stuff that we're just not using. Last week I donated a bunch of items which felt great because it really was just taking up useful space in our garage and causing such a mess. Last week we also had a heatwave which was really interesting. It just seems as if the summer months speed by, so it was nice to me to just be able to go outside and enjoy the weather.

Happy Monday! I hope everyone had a wonderful holiday weekend! We're currently having a heatwave in which I'm loving every minute of. I believe just last week I woke up to our temps being in the low 50s... This past week I was really busy getting things together for Michael. He started passing league with football and also had to attend a football camp three days last week. I harvested some sugar snap peas which I was really excited about. I love this time of year and being able to just go into my garden and grab a snack and/or a meal. I also had a mid-week self-care day. It rained so hard one-day last week that I had to stop my daily walk. I decided to go home and finish my at-home workout. It was nice to have that mid-week self-care day. I think I'm going to start implementing more often. I unexpectedly had a cut flower garden this year. Last year I planted some bulbs late and a few decided to make a grand entrance this year. It was such a nice rewarding surprise. I hope to actually purchase more bulbs and expand my garden. The lily bulbs I planted are just so pretty and are making the perfect bouquet in our kitchen. Anywho...

Happy Monday! I hope everyone had an amazing weekend. I can't believe it's the official start of summer. The kids are out of school. I can't wait to start working on our Summer Bucket List. Last week instead of making garlic honey salmon, I ended up making jerk salmon. I guess it came out yummy. I didn't hear any complaints and Michael actually asked for more servings. This was my first time making jerk salmon. Hopefully, one day I'll master the recipe.

Happy Monday! I hope everyone has an amazing weekend. The weather was so amazing this past weekend. I finally had the opportunity to plant some of my vegetable plants. It felt so good to be in my garden. Father’s Day was really low key. My Dad had to work and the Mister just wanted to relax. I ended up making brunch which consisted of Turkey bacon, scrambled eggs, grits, and fried fish. For dinner, I made shrimp Alfredo w/ garlic bread.
Everyone loved the fish and grits. I have to make it more often. Michael even asked if there was any more left which he typically never does.

Happy Monday! It’s officially countdown time until the end of school we have a little under two weeks left. I have so many mixed emotions about this. Kinda sad that this might be Michael’s last year having his summer free. Sports camp and possibly working and having a social life. I can imagine his summer is going to start to get really busy going forward.
The weather has been wacky in Connecticut. For instance, it was around 80’degrees. However, it was breezy. I know I shouldn’t complain because it’s better than snow...
Last week I tried a yummy homemade jerk chicken recipe. I’m going to try and recreate the recipe and actually take note of the seasoning measurements and not seasoning to taste. The family loved the recipe. I actually made it in the crockpot. The chicken was so tender and flavorful. Per the family. It was nice to create something different and not the same ole same meals. Plus, I love that I was able to create the meal in the crockpot, in the oven or even on the grill. If you don’t own a crockpot. I highly suggest investing in one. It’s such a life saver, especially during the warmer months. Also, I would like to get back into freezer cooking. Freezer cooking used to really come in handy when I would already have the meat marinaded in advance and all I would have to do is thaw it out and put it in the oven, grill or crockpot. As you can see, so many mixed emotions and a lot to add to my to-do list.
