The Best Baked BBQ Chicken (EVER)

Growing up, my mother would make baked BBQ chicken at least once a week. I remember her cleaning and seasoning the chicken and placing it in the oven until it was done. Then taking it out of the oven to add the BBQ sauce, and using a spoon to spread the sauce all of the chicken. I was always in the kitchen with my mother and watching cooking shows. I'm the middle child, and we didn't have cable in our rooms only in the den. I remember begging my siblings to allow me to watch my favorite cooking shows. I could still spend all day watching cooking shows and YouTube still to this day. I love learning/creating new recipes and trying/learning new techniques. If you follow me on social media. I typically try to give you guys a walkthrough of the recipes I make for my family. I typically cook every day during the week. The weekends are really up in the air. For some reason, I've never shared on the blog my basic BBQ chicken recipe that is pretty much my go-to for my family.  No matter if you're making chicken thighs or wings. I use the recipe base for whenever I'm making BBQ chicken even if it's going on the grill.  What I love about this recipe is that it's super easy too. You can allow the chicken to marinate or put it straight in the oven after seasoning it. This recipe go perfect paired with my homemade cornbread. Also, I use a Silpat mat for my baked chicken. It really makes for a super easy cleanup.

Recipe

Ingredients

  • 4 Chicken Thighs
  • Season to taste
  • 1/2 Tablespoon Adobo
  • 1/2 Tablespoon garlic powder
  • 1/2 Tablespoon onion powder 
  • 1/2 Tablespoon dried parsley
  • 1 tsp cumin 
  • 1 bottle of your favorite BBQ ( 1/2 bottle needed )


Instructions 
  1. Preheat oven to 350
  2. In a medium glass bowl. Clean your chicken, make sure all of the excess water is out of the bowl. (I like to add one tablespoon of white vinegar to the bowl. Rub the chicken with the vinegar and rinse three times, ensuring no water is left in the bowl.) 
  3. While the chicken is in the oven, add the seasoning (do not add the BBQ sauce) with your hands (I use a glove) rub the seasoning on the chicken, set the chicken aside. 
  4. Line your baking sheet with your Silpat mat. Add the chicken to the mat. 
  5. Bake in preheated oven until no longer pink at the bone and the juices run clear, about 1 hour, turning chicken about halfway through. 
  6. Once the chicken is cooked, remove from the oven. (optional: remove juices from the pan) Add your favorite BBQ sauce, place back in the oven for about 10 minutes. 
  7. Allow cooling and enjoy!

  6. There's something about a brine made with a little bit of vinegar that amps the flavor of BBQ'ed foods. I also love the addition of adobo for a little extra smokiness. Yummy!
