Flourless Vegan Apple Pie Waffles
Lately, I've been obsessed with vegan waffles. If you checked out my post from yesterday. I discussed me welcoming fall by making Vegan Pumpkin Waffles. Seeing how it's not pumpkin season yet. I ran out of pumpkin puree and decided that I would opt to make sweet potato vegan waffles. The only problem with that option is that I didn't feel like waiting for the sweet potatoes to cook in the oven. (I prefer to bake my sweet potatoes and not boil them. ) I typically have baked sweet potatoes on hand. However, I must have used them all. I decided to go with making apple pie vegan waffles. What I love about this recipe is that this is actually healthy, diet friendly, and doesn't require too many ingredients. I did run out of homemade oats flour. However, it's super easy to make. I made enough to ensure that I had enough for the next upcoming weeks. Though we were in the middle of a heatwave. My home smelled amazing and just like fall. I plan on making this recipe until I'm able to restock on a pumpkin puree. You can also top this recipe with any of your favorite toppings or even sauteed apples in maple syrup and almond butter. The possibilities are endless!

Flourless Vegan Apple Pie Waffle
Recipe
Ingredients
- 1/2 cup unsweetened applesauce
- 1/2 cup almond milk
- 1 tsp vanilla extract
- 1/2 Cups + 2 tablespoon oats flour
- 1 teaspoons baking powder
- 1/4 teaspoons baking soda
- 1teaspoons apple pie spice
- 1/4 teaspoon Himalayan salt
- Nonstick spray
- Maple syrup ( topping, optional )
Instructions
- Combine all your wet ingredients and mix together with a spatula or wooden spoon.
- Combine all dry ingredients into the wet ingredients mixture.
- Set mixture aside for about 15-20 minutes and preheat your waffle maker.
- Add about 1/2 cup of the batter to the waffle maker once it's ready. ( This batter should make about three center waffles. )
- Enjoy with some warm maple syrup!

ReplyDeleteThese waffles look great for a break from our usual breakfast. I don't think I can make them during the week but a weekend treat for our vegan family would be perfect.
