Flourless Vegan Pumpkin Waffles
One of the biggest frustrations of transitioning into a plant-based diet is developing recipes and trying foods that actually taste good. Let's be honest here. Healthy foods are perceived a lot of times as just not tasting that great. I think a lot of people when they think in terms of healthy food options what possibly comes to mind is fruit, salad, and food that doesn't taste that great.
Seeing how I always like to go with healthier alternatives and not using flours and refined sugar. Developing recipes take a lot of playing around. When I do try a recipe for the first time and it comes out perfect. I can't wait to tell the world about it.
I was beyond excited when I created a yummy flourless pumpkin waffle recipe and it was delicious from the first bite. I know what you're thinking, it's not even October and I'm already "pumpkin everything" Yup! As prior stated, blogging as turned fall into my third favorite season. I now get excited about fall because honestly, living in Connecticut I have no other choice but to embrace it and make yummy treats.
I love everything about this recipe. While making the waffles my entire home smelled like fall and it really made my heart smile. What I also love about this recipe is that I didn't use any sweeteners or oils in the batter. I did use maple syrup, of course, to top the waffles with and I also used a coconut oil spray to assist with the waffles not sticking to the pan. I did try alternating every other time for spraying my waffle pan and everything worked out well. If you're looking for a flurry, flavorful vegan recipe this is it! Plus, it's healthy!!

Recipe
Ingredients
- 1/4 cup pumpkin puree
- 1/2 cup almond milk
- 1 tsp vanilla extract
- 1/2 Cups + 2 tablespoon oats flour
- 1 teaspoons baking powder
- 1/4 teaspoons baking soda
- 1teaspoons pumpkin pie spice
- 1/4 teaspoon Himalayan salt
- 2 tablespoons applesauce
- Nonstick spray
- Maple syrup ( topping, optional )
Instructions
- Combine all your wet ingredients and mix together with a spatula or wooden spoon.
- Combine all dry ingredients into the wet ingredients mixture.
- Set mixture aside for about 15-20 minutes and preheat your waffle maker.
- Add about 1/2 cup of the batter to the waffle maker once its ready. ( This batter should make about three center waffles. )
- Enjoy with some warm maple syrup!

You had me at pumpkin. I am not even a vegan, so that part doesn't effect me, but my sister in law is and she is going to flip for these.
