Stuffed Vegan Chips

If you're on Instagram or TikTok you've noticed a huge trend with vegan chips made out of pasta. I've seen so many videos and honestly, I wasn't sure if I wanted to give this a try. I'm not the biggest fan of the hard pasta towards the ends when you make baked ziti. I was so happy when I was inspired by a recipe I had seen a stuffed vegan chips option with cheese in the middle.  What I love about this recipe is that it's vegan, doesn't require a lot of ingredients, and can be made on a whim. Of course, I tried these and loved them.

Recipe 

INGREDIENTS 
  • 20-30 pieces of big rigatoni pasta
  • Vegan cheese
  • Panko or regular Breadcrumbs
  • 1 cup chickpea flour
  • ⅓ cup corn starch
  • ¾ cup water milk
Optional 
  • ½ tsp paprika
  • ½ tsp garlic
  • ½ tsp Himalayan salt

INSTRUCTIONS
  1. Cook pasta according to instructions and preheat oven to 400°F - optional to deep fry as well 
  2. Cut cheese in chunks that fit the shape of the pasta
  3. Gently squeeze cheese into each rigatoni 
  4. Prepare a bowl with chickpea flour, starch, water, and spices
  5. Prepare a plate with the breadcrumbs (season with spices - optional)
  6. Dip each filled rigatoni into the batter and coat with breadcrumbs
  7. Bake for 15 minutes or until golden brown
