On today's episode of dinner with my family. I wanted to share a quick meal that I made for my family last week. This recipe is super easy to make if you have everything on hand. My son is a huge fan of jerk chicken, and this was actually my first time using chicken breast and he loved this recipe. I've been making jerk salmon alfredo for family gatherings, as well as jerk shrimp alfredo, and it has been a huge hit. Of course, regular jerk chicken is always on rotation in my home. I opted to make this recipe on the grill. However, it can easily be made on the stovetop as well.
Recipe
- 1 tbsp brown sugar
- 2 tsp jerk seasoning
- 1 tbsp Adobo seasoning
- 2 ct. chicken breasts
- 8 oz. penne pasta
- 1 tsp onion powder
- 1 tsp garlic powder
- 8 oz. penne pasta
- 1 Jar roasted garlic alfredo sauce
- Thyme to garnish
- Preheat grill or stovetop
- Add all the cleaned chicken breast to a medium bowl and add off of the ingredients except for the pasta, alfredo sauce, and thyme.
- Rub all of the seasons in the chicken
- In a large pot, add a lot of water and salt the water. Let it get to a rolling boil, then add penne pasta and boil for about 6 minutes. Drain water.
- While the pasta is cooking, Grill or sear your chicken on medium heat for 12-15 minutes, flipping halfway, until completely cooked. Remove from the skillet and slice.
- Add the alfredo sauce to the drained pasta
- If you would like to add additional spice to the dish, add a tsp of the jerk seasoning - optional
- All the sauce and pasta to cook on low heat
- Place the cooked pasta in a serving dish
- Add the sliced chicken on top of the pasta
- Garnish with thyme
- Enjoy!
