Chickpea Vegan Chick'n Salad

Growing up, my mom was more of a fan of tuna salad versus making chicken salad. It wasn't until I became an adult that I acquired the taste for chicken salad. Now, that I no longer eat meat or seafood. I finally decided to give the vegan option a try. I love how simple the recipe is to make. 

It doesn't require a lot of ingredients and it's perfect to top on...
  • crackers
  • cucumbers
  • lettuce
  • kale
  • celery, etc.

This recipe is perfect to have on hand during the summer months, and it's truly a crowd-pleaser. 

CHICKPEA VEGAN CHICKEN SALAD

INGREDIENTS
  • 1 cup vegan mayo
  • 1 15 ounces can chickpeas
  • 1/2 cup diced celery
  • 1/2 cup diced red onion
  • 1/4 cup red peppers (optional)
  • dash yellow mustard
  • dash black pepper
  • dash Himalayan salt 
  • vegan chicken seasoning (Trader Joes)

INSTRUCTIONS
  1. Drain and rinse chickpeas (you can also save the liquid for future recipes)
  2. Mash chickpeas with fork or food processor
  3. Add chickpeas to a large bowl
  4. Add celery, onion, red peppers, poultry seasoning, salt, pepper, and mayo and combine
  5. Refrigerate until serving.
