Vegan Orange Loaf Cake

When life gives you oranges. You make a yummy loaf cake! I had some oranges on hand, though I enjoy snacking on oranges. I thought it would be cool to create a yummy loaf cake. Years ago, I made CopyCat Starbucks Orange muffins which have to be one of my family's favorites. The cranberry orange muffins are so moist and yummy! I was in the mood for a guilt-free snack, and I made this loaf cake. It’s really yummy, and the scent of orange really brings out the mood of spring.

Vegan Orange Loaf Cake 

Ingredients:
1 & 3/4 cups Spelt Flour
1 flax egg (1 tablespoon of ground flaxseed and two tablespoons of water)
1 1/2 Tsp Baking Powder
3/4 Tsp Baking Soda
3/4 Tsp vanilla extract
1/4 Tsp Himalayan salt
Orange Zest, from 1 orange
1/2 cup fresh Orange Juice (about 1 - 1/2 oranges)
1/4 cup Maple Syrup
1/3 cup Unsweetened Apple sauce
2 Tsp Apple Cider Vinegar
Oil to grease the loaf pan

Instructions:
  1. Preheat oven to 350 and grease your loaf pan
  2. Sift all dry ingredients together in a large bowl.
  3. Combine wet ingredients, and flax egg, except for apple cider vinegar, to a small bowl, and whisk together.
  4. Add wet ingredients to dry ingredients and gently mix to combine really well. Make sure you do not overwork the batter.
  5. Fold apple cider vinegar into the batter and pour it into the loaf pan.
  6. Bake on center rack for about 30 minutes or until a toothpick inserted in the center comes out clean.
  7. Remove from the oven and let cool before removing it from the pan.
  8. Allow the loaf to cool outside of the pan. Enjoy!
