Homemade Yellow Cupcakes with Butter Cream Frosting

Saturday night I decided  to prep to bake another homemade sweet-potato pie. Well, Sunday afternoon, I had the bright idea to bake homemade cupcakes. I knew I wanted to give the recipe bakerella.com shared another try. I tweaked the recipe to my liking. I hope you enjoy!

Homemade Yellow Cake/Cupcakes

2 1/2 teaspoons of salt
1 1/2 tablespoons of baking powder
2 cups of sugar
1 cup (2 sticks) of butter (room temperature)
4 eggs (room temperature)
3 cups of sifted allpurpose flour
1 cup of whole milk (room temperature)
2 teaspoons pure vanilla extract
Preheat oven to 350 degrees.
  • Using a mixer, cream butter until fluffy.
  • Add sugar and continue to cream for about 7 minutes.
  • Add eggs one at a time. Beat well after each egg is added.
  • Mix flour, salt and baking powder
  • Add flour and milk (alternating to creamed mixture), beginning and ending with flour.
  • Add vanilla to mix; until just mixed.
  • Bake for 25 – 30 minutes (depending on your oven) until done.
Buttercream Frosting
Adapted from: wilton.com


  • 1/2 cup solid vegetable shortening
  • 1/2 cup (1 stick) butter or margarine softened
  • 1 teaspoon clear vanilla extract
  • 4 cups sifted confectioners' sugar (approximately 1 lb.)
  • 2 tablespoons water, cream or milk

Using a mixer, cream softened butter & shortening and vanilla until smooth.
Add sugar gradually, allowing shortening, butter and sugar to cream together before adding more.
