Vegan Boxed Cake
For my birthday I wanted a vegan cake and honestly, I was being so last-minute that I probably could order a cake if I just was a bit more proactive, and consistent. A couple of days before my birthday I stopped at the grocery store to pick up the essentials that I would need to make this cake mind you this was my first time actually making a vegan boxed cake. That same day of my birthday actually stopped at my local BJ’s and picked up strawberries. I kind of wanted to have that naked cake feel. For this recipe, I used sparkling water instead of plain water. I also opted to use just add applesauce and I sifted the box cake mixture prior to adding the ingredients in a bowl. I’m so pleased with how this recipe turned out I actually made cupcakes in a larger cake and put the larger cake in the freezer and when I took the cake out to thaw it was just amazing super moist super delicious. I love that this recipe is just so easy to make and a lot of these items I already had on hand. I also went with the store-bought frosting. If you’re thinking about making a vegan cake option at home and you just want a simple alternative without a ton of measuring in a ton of ingredients. I would highly suggest giving this a try.

- 1 Duncan Hines Box Cake (sifted)
- 1 Cup of Sparkling Water
- 1 Cup Apple Sauce
Instructions
- Combine all ingredients, and follow box instructions for baking.
