In 2012 I created a blog post about what I’m Thankful for. As I grow as a person. I try to think about what I’m Thankful for on a daily basis. This year, besides being thankful for my support system, I’m Thankful the ability to have “Experience”. The experience/opportunity to learn, meet new people, and the experience to grow as a person. I’m not sure why I’m in such disbelief about Thanksgiving just two days away (insert big eyes). The weather here has been pretty nice since Sunday. However, we’re getting snow tomorrow. I can’t remember that last time we got snow before Christmas. I’m sure the snow is not going to stop anyone from going black Friday shopping. Especially with stores opening as early as 5:00 pm, I’m really not sure what my plans are as of right now. I would love to pick up a couple of items here and there. Nothing to brag home about, you know griddle, waffle maker (stuff for the home). We usually go to the outlets out of state with the pending weather. However my decision will be based on whatever Mother Nature does. Especially since I’m the driver (insert: side eye)

Anywho, I really do not have an item in mind. ~~Of course I want a big TV for under $200.~~

Happy Monday! How was your weekend? If you follow me on Instagram you know if Zumba on Saturday and boy did I must say that I really underestimated the experience. Let’s just say that I could not keep up. I know the instructors say that you can do your own thing. However, I came to the realization on Saturday that I will probably not make the cut to be one of Beyoncé’s background dancers, LOL just kidding.

Anywho… what’s on the menu this week?

Shrimp Teriyaki Recipe

This is another favorite recipe that I make all the time. It’s super simple and it reminds me of the one that is sold at my local mall food court. You know, the ones that give you a free sample and two minutes later you in line purchasing two meals. LOL.

Ingredients:

1/2 cup soy sauce

2 tablespoons sugar

1 tablespoon oil

1 1/2 teaspoons cornstarch

2 garlic cloves, crushed

1 teaspoon minced fresh ginger

2 tablespoons water

2 lbs medium size raw shrimp (peeled and deveined)

Directions:

Blend soy sauce, sugar, oil, cornstarch, garlic, ginger, and water in a small pan.

Simmer, stirring constantly til thickened about 1 minute cool.

Coat shrimp with sauce; drain off excess.

Place on rack of broiler pan, broil for 3-4 min on each side or till cooked.

Serve on a platter while hot.

I still can’t believe Thanksgiving is next week. I still haven’t decided what I’m cooking at home (a small meal for my family). As always, my weekends are pretty low key. I have my girls program today. I have a benefit event to attend on Saturday and Sunday, hmmmmm. I really would love to get my house organized. Thanks to my desk for assist with storage. However, I still have a long way to go, and typically since I put my tree out after Thanksgiving. I really need to get my house in order.

Wondering what I did with the left over apples from our Apple Orchard visit? Here’s one of the recipes I tried. This recipe had our home smelling simply amazing. This was my first time making apple cider and some of the items I had on hand and some I didn't. Therefore, I opted to use the powder version instead.

Anywho, my family loved this recipe. I opted to store the left over cider in mason jars for future use.

Items Needed:

1 dozen apples...I used a bag of McIntosh, but any apples/any combo of apples will do

1 orange
1 1/2 cups brown sugar
4 cinnamon sticks
1 whole nutmeg
1 tbsp whole cloves
1 tsp whole allspice

Instructions:

Chop apples and orange into quarters.
Place fruit and all other ingredients in a stock pot and cover with water, leaving a few inches at the top of the pot.
Bring to a boil and stir for an hour, then simmer for two more hours.
Mash all ingredients with a potato-masher as you go and then strain through a cheesecloth into mason jars or a pitcher.

I really love everything about this perfume line. I am super happy that I was given the opportunity to review this product. My samples came in the mail super-fast and were packaged in the cutest little canvas bag. I really love that for $7.00 you can purchase the sample pack with all of the Pinrose scents or you can purchase a one ounce bottle for $50.00. To my surprise I found that Pinrose scents are nice and airy and not super strong like some fragrances. I really enjoy how much thought Pinrose put in to making this collection. I wanted to share my favorite pancake recipe. You guys know I’m a homemade type of gal. I came across this recipe a couple of years ago and it has become my go to recipe. My pancakes come out perfect every time!!

Do you have a favorite pancake recipe?

Original recipe makes 8 servings (via)

1 1/2 cups all-purpose flour

3 1/2 teaspoons baking powder

1 teaspoon salt

1 tablespoon white sugar

1 1/4 cups milk

1 egg

3 tablespoons butter, melted

Directions

In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth.

Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.

So it’s been a year since I stopped eating meat. This has been so challenging and rewarding at the same time. One of the reasons is due to me being such a picky eater. I do love that I have been open to trying new recipes. I discovered my love for homemade Hummus and white bean soup and so much more. I honestly have really learned my body. I’ve learned to make sure that I get all of the daily vitamins and nutriments that I need.

I still have no desire to eat meat and no I’m not one of those people who judge people who do. I still have a strong love for cheeses, ice cream and seafood (I know I’m labeled a pescatarian), hence the reason that I have not become a vegan.

At times it’s hard because we do not have a local Trader Joes or Whole Foods. However, Target and Walmart have been doing a great job at keeping their selection stocked.

Anywho, I honestly did not start this journey to stop.

So yesterday while running errands. I stopped at my local Savers which is pretty much similar to a Goodwill or Salvation Army. I usually find really great deals on furniture items and the occasional clothing items. However, I usually never have the transportation to transport the larger items home. Well, yesterday was a little different. I was driving our van. However, I was really in a rush and the van was full with items from my girls program.

While looking around I came across some great pieces and of course I left my phone in the car so I wasn't able to take any pictures.

I was super happy when I found this desk and you really can't beat that price $2.99! What a score.

Anywho, I went today to purchase the supplies I needed to complete the project. I used two cans of satin (which I’m in love with) black spray paint and one can of brushed nickel. I opted to paint the knobs and misplaced one and used two I had on hand from a prior knob purchase at Target. This project was under $20. I also used a two 50% off and one 40% off coupon to purchase the spray paint at the craft store. Also the knobs I had on hand from Target was purchased on clearance. ~~Those things are expensive~~

Since I was pressed for time today and the fact that we might get snow tomorrow, I was really rushing to get this project done. I’m happy with the results from this project and I’m looking forward to finding more great pieces like a fireplace mantel.

Hey!

So the other day out of not where I received an invite to see the movie Beyond the Lights before it comes out in theaters. At first I was really hesitant and excited at the same time. I could not figure out who invited. However, I was super excited and the Mister and I were well overdue for a date night.

For some reason I am not a huge movie buff. Either I like a movie or I don’t. I’m usually not the type of person to watch the same movies over and over again; however, I do have a few that I love. I’m also not the type of person to go to the movies all the time. I know weird right? The Mister loves going to the movies. He would probably go at least a couple of times a week if time permitted.

However, the movie premiere was God sent. It was just what the mister and I needed. I laughed, became teary eyed and all of the other good stuff that comes along with seeing a great movie.

Even though this is not a review post just me rambling, LOL. If my friends were to ask me if they should see the movie, I would say YES!

Happy Monday!!!

I love a new found love for ginger in my meals and drinks. Growing up my mother actually never used ginger. However, when I met the mister his mother would "Juice" and make delicious drinks with ginger in them. My favorite drink is fresh pineapple and ginger and I have found some pretty yummy meals with ginger in them. Hence all of these meals with ginger in them.

My family absolutely loved this recipe. The Mister was a little hesitant about trying it. However, once he did. He was ready for MORE!! I didn't measure the seasoning. I just sprinkled it over everything in the crock pot. I also love how I had everything on hand and didn't have to run to the store. I opted to use the Italian style tomatoes, (since I had it on hand). This recipe was budget friendly for me again since I had everything on hand. This recipe is going on my family favorites list.

Also, I opted not to really shred the chicken, since I made a crock pot meal which had shredded chicken the night before.
