The Vegeterian Struggle (French Onion Soup Recipe)

So, I am so struggling as a vegetarian…its more so just not having a taste for anything. I have so many recipes... I find myself eating unhealthy meals. Like pizza or fried foods.  The mister has been very supportive. It’s just me being me. So last night, not having any idea of what I was going to eat for dinner, I saw someone post a picture of onion soup, I’ve seen the Campbell’s version (don’t laugh at me) but noticed it was made with beef stock so opted not to purchase it. So last week, not having any idea of what authentic onion soup taste like, I made my own version. I only used vegetable stock, French bread that I had on hand (or at least I think it was French bread) thyme, yellow onions and Kraft shredded Italian blend of cheese. I did not measure anything. I eyeballed everything. I must say that the soup was delicious, the only thing I forgot to do was toast the bread (yikes). I’m getting in my grove of finding my staple foods, and this is one of them!!! I do plain on trying this recipe again. :)

  3. This looks delicious! I've been a vegetarian since 1990- it gets easier! My husband joined me in going meatless after I took a Nutrition class and I learned about meat and what it does to one's diet. We raised our family vegetarian. Don't get me wrong, there are vegetarians who don't know what they are doing and eat poorly, just as there are meat eaters who eat very poorly. Lots of color, lots of variety, try new recipes :)
