The Best Pound Cake Ever!

by - 4/18/2012 05:58:00 AM

I hope everyone is having a wonderful day so far :). As you guys can see. I have a bit of a sweet tooth. I enjoy cooking and trying new recipes. But I love baking... I saw this recipe a couple of weeks ago on a site, and I knew I had to try it. You see, I have never made pound cake before and I am a huge pound cake fan. While cooking Sunday dinner I tried to think of a nice desert recipe to try, and boy did this pound cake come to mind. Of course I had to run to the store to pick up a couple of the ingredients. Once I arrived back home from the store, I could not wait for the ingredients to get to room temp. While prepping the ingredients, I decided to think about the possible toppings for this dish. I had some left over crushed pineapple and frozen strawberries (that I usually use for smoothies) once everything was room temp. I followed the directions to a "T”, and decided to use a bunt pan, which I had on hand (memo to self: get a pan to bake my pound cake in) I patiently waited for the cake to finish and cool. Once it is was time for the cake to flip on the baking rack. I ate a little piece and the bragging officially started. Once the cake was cooled, I decided to take a little slice. It was total bliss :) no really I made the pound cake on Sunday, and it is all gone now. I called my family over to have a slice and they loved it. This is a recipe that I am truly looking for to making again this week. Did I mention that I never had homemade pound cake before? (Or cannot remember)

Cream Cheese Pound Cake
Recipe adapted from via
(Makes 12 servings)
Ingredients:

1 ½ cups butter, softened
1 (8 ounce) package cream cheese, softened
3 cups sugar
6 large eggs
3 cups all-purpose flour
1/8 teaspoon salt
1 tablespoon vanilla extract

Directions:
Preheat oven to 300°F.

(Bing all ingredients to room temp before starting)Beat butter and cream cheese at medium speed with an electric mixer until creamy. Gradually add sugar, beating until light and fluffy. Add eggs, 1 at a time, beating just until blended after each addition.

Combine flour and salt; gradually add to butter mixture, beating at low speed just until blended. Stir in vanilla. Spoon batter into a greased and floured 10-inch tube pan.
Bake at 300 degrees for 1 hour and 45 minutes or until a long wooden pick inserted in center comes out clean. Cool in pan on a wire rack 15 minutes; remove from pan, and let cool completely on wire rack.

Have you done any baking lately?
