(Super Easy) Miniature Cheesecake

Recipe Adapted from via

Ingredients

 1 (12 ounce) package vanilla wafers

 2 (8 ounce) packages cream cheese

 3/4 cup white sugar

 2 eggs

 1 tbsp vanilla extract

1 tbsp lemon juice

 Directions

1. Preheat oven to 350 degrees F (175 degrees C). Line miniature muffin tins with cupcake paper liners.

2. Place one vanilla wafer into each paper lined muffin tin.

3. Cream together with an electric mixer the cream cheese, sugar, eggs, lemon juice, and vanilla. Fill each miniature muffin liner almost to the top.

4. Bake at 350 degrees F (175 degrees C) for 15 minutes. Cool and then top with a teaspoonful of your flavor topping.

  4. Those look great - I've never made cheesecake bites directly in the muffin tins, I always cut them into squares after but this looks much easier!

  6. The last dessert I made was probably 4 months ago. My hubs and I need to lose weight so we put on hold. what I like about these are there size. I like to do bite size desserts, more control.
