Have you tried Country Crock butter before? Well, you have no idea what you are missing. This is my favorite butter and my kids love it too. Everything just tastes so much better with Country Crock. As you guys know, I love creating and recreating recipes. I also love finding innovative ways to entice my kids to eat their veggies. I was so excited when I found a printable Clare Crespo Cookbook. There are so many fun, and easy ways to present veggies to my kiddos. I just knew that my family would love these recipes. After looking through the Cookbook several times, I could not decide on which recipe to try first. I finally decided to try the “Hashbrains” recipe. Doesn’t it have the cutest name?

Hashbrains recipe

Ingredients

4 Servings
2 large baking potatoes, peeled
1 tsp. grated onion
1 egg, slightly beaten
1/4 tsp. salt
1/8 tsp. ground black pepper
1/4 cup Country Crock Spread, melted


Preheat oven to 400°.

Line baking sheet with parchment paper, set aside.
Grate potatoes using a food processor fitted with a shredding disk or with a box grater. In large bowl, combine the potatoes with enough cold water to cover and let soak for 10 minutes.

Drain the potatoes and then layer them between kitchen towels and squeeze to remove any excess water. In a large mixing bowl, mix the potatoes, onion, egg, salt and pepper. Gather a handful of potatoes and place on baking sheet in a mound. With your hands form an oval half-dome. With a spatula press a 1-inch crevice down the center of the oval lengthwise to define the two lobes of the “brain.” Make three more brains. Brush tops and sides of brains with Country Crock Spread.

Bake 30-40 minutes until golden brown. Remove from oven and serve.


This recipe is super simple and yummy; my little guy always tells me how veggies taste good with Country Crock. I was thinking that’s great to know there’s no need to hide them anymoreJ. He use to think I made special sauce for his veggies, and it was only Country Crock. Did you know that 8 out of 10 kids think veggies with Country Crock are delicious; this is how I was able to get my kids to start eating their veggies. Trust me kids love veggies with Country Crock! I am really looking forward to making this recipe again this weekend. I am also looking forward to trying some of the cool recipes in the Clare Crespo Cookbook. I love how the cookbook utilizes all different kinds of veggies in cool ways like corn, bell peppers, and zucchini and much more.   2. What is it made out of??? I've never tried Country Crock before...maybe I'll have to get a small tub and try it in a few recipes. Those look really good by the way! My son LOVES any kind of potatoes, so I really need to try this one!
