Flourless Peanut Butter Maple Walnut Cookies

Prior to going on my weight loss journey. I would bake at least once a week. If you've been following my blog for a while. You know that baking really does have a special place in my heart. I love sweets and starchy foods and that was one of my biggest problems. I literally was the type of person that would have cupcakes or ice cream for breakfast. Now that I'm living a healthier lifestyle. I still have the same treats. However, my approach with having them is on a healthy scale. I don't bake with sugar, flour or eggs. These cookies can literally be eaten at any time of day.

Note
When I make my cookies, I use all natural peanut butter. One of the places that has all natural peanut butter for a great price is Target. Purchase the peanut butter with the yellow top.


Recipe

Ingredients

  • 1 Flax Egg (Tablespoon ground flaxseed + 3 Tablespoons water)
  • 1 teaspoon vanilla
  • 1/2 cup natural peanut butter
  • 1/4 cup maple syrup
  • 1 tablespoon oats 
  • 1 teaspoon cinnamon 
  • 1 tablesoon walnuts 

Instructions 
  1. Preheat the oven to 350°.
  2. Make the flax egg. Combine the ground flaxseed and water together in a bowl, set aside for about five minutes 
  3. In the same bowl with the flax egg, add the peanut butter, maple syrup, cinnamon, oats, vanilla, and baking soda until well combined.
  4. Spoon 1 tablespoon of the cookie dough mixture, on a nonstick baking sheet. About 1 inch apart 
  5. Bake for 9- 10 minutes. Remove from oven
  6. Allow to cool completely, and enjoy!
