Crock Pot Chicken & Stuffing Recipe

If you've been following my blog for a while now. I frequently mention making Chicken and Stuffing for my family on Menu Plan Monday. I've mentioned in the past that hands down this is one of my family favorite recipes. I stumbled upon this recipe when I first started blogging. I can't remember if the recipe was originally found on Pinterest while doing a search for crockpot recipes or while participating in a blog hop. I honestly can't remember. What I do remember is thinking to myself. “OMG, my readers will never believe how good this recipe taste”. If you like chicken and stuffing this recipe is for you. I can't say that it's diet friendly. However, I will say that it's savory and your family will love it. I typically make this recipe a lot during the fall/winter months for whatever reason.


Recently, my son asked me while I haven't made this recipe in a while and I honestly didn't have an excuse. Stuffing is one of the Mister's favorite sides. I used to bake a whole chicken and stuff it with stuffing and he used to love it. I typically will stock up on stuffing when I have a Bj's coupon. I've also found them lately at ALDI's for under $1. I'm not an extreme couponer. So I really don't know the cheapest price for it. However, I will say that this recipe can be really affordable and the best part is that it doesn't require a lot of time. The original recipe called for chicken breast. However, I make this recipe with whatever I have on hand. Two leg quarters, four or five drumsticks. I've never made it with chicken wings. However, I've never had any issue with using the leg or thigh. It defiantly based on your preference though. I also want to mention that using the slow cooker liners for this recipe is a must. Trust me, you will thank me later. It really makes cleanup a breeze unless you don't mind soaking and scrubbing dishes. This recipe has been on my menu plan rotation for the last couple of weeks because it's really that good. You can pair this meal with your favorite veggies or a side salad or even indulge in the chicken and stuffing.

Chicken & Stuffing Recipe 

Recipe 


Ingredients
  • 4 boneless chicken breasts
  • 1 box Stuffing Cornbread Mix (6oz)
  • 1 can cream of chicken soup
  • 1/2 cup sour cream
  • 1/4 cup water
  • Salt and Pepper (optional)

Instructions
  1. Clean and season the chicken to taste 
  2. Place chicken in bottom of crockpot
  3. In a small bowl mix together the water, sour cream, and cream of chicken and set aside
  4. Pour stuffing over chicken.
  5. In a medium-size bowl combine cream of chicken soup, sour cream and water; mix well.
  6. Pour on top of stuffing mix.
  7. Place lid on crockpot and cook on low for 4 hours-check in 3 hours 
  8. Fluff and serve
