Semi-Homemade Pot Pie Recipe

It is still a bit chilly for this time of year. I wanted to make some comfort food for the boys. We had leftover rotisserie chicken and pretty much everything else on hand. If you follow me on Snapchat. you were able to get a glimpse of how this meal was created. I was inspired by the owner Tiffini at Latched and Hooked. She made something similar for her family and I thought how simple but delicious this meal would be for my family.


What I did
Preheat your oven to 350
I used a ceramic dish I love the cleanup with these dishes (you can purchase one here. They are super simple to clean. Plus, the Mister broke the one I purchased from the Salvation Army for a couple of bucks.
Remove all of the chicken from the rotisserie We used pretty much all of the breast meat. My men like the wings and drumsticks. Place in a medium size bowl
Add to the bowl one bag of mixed vegetable (the small size bags they sell at the store)
add one 10 3/4 oz can (normal size can) cream of chicken
plus, one can of hot water
Mix everything together in the bowl (chicken, mixed vegetables, cream of chicken)
I used the pre-packed pie crust rolled (two came in a pack) you can make your own as well.
unroll the pie crust and place it in the bottom of the baking dish
add the mixture of chicken, vegetables and cream of chicken to the baking dish
Level the mixture out
Place the unrolled pie crust on top of the dish. I tried to roll and pinch the sides.
Bake at 350 for 40 minutes or until the crust is golden brown.
