I love how the batter can be made in advance and is perfect also to enjoy on a whim. This recipe is sure to be a crowd-pleaser at your next gathering. These cookies are super chewy and flavourful.
Whole Wheat Pecan Cookies
Ingredients
Flax egg:Wet:
- 1 Tbsp ground flax seed
- 1/4 cup water
Dry:
- 1/2 cup vegan butter
- 2/3 cup organic cane sugar
- 1 tsp vanilla extract
- 1/2 tsp cider vinegar
Fold in:
- 1/2 tsp Himalayan salt
- 1 tsp baking soda
- 1 cup whole wheat pastry flour, + 1 Tbsp
Instructions
- 1 cup pecans, chopped
- Preheat the oven to 350 degrees and use your silicone mat or place parchment paper on a baking sheet.
- Whisk together the flaxseed and warm water. Let sit for 3-5 minutes.
- Add the wet ingredients to a large mixing bowl: vegan butter, cane sugar, apple cider vinegar, vanilla extract, and flax ‘egg’ – Cream everything together by hand or stand mixer.
- Add the dry – flour, salt, baking powder to the mixing bowl. Beat until creamy and fluffy.
- Fold in the nuts.
- Scoop cookie dough onto the baking sheet. Bake at 350 degrees for 10-14 minutes. Transfer cookies to cooling rack. Enjoy warm!
