Coconut Curry Chickpeas

On this week's batch cooking recipe of the week. I made Coconut Curry Chickpeas. This recipe was simply divine. I honestly wish I picked up more chickpeas during my essentials store run. This recipe can surely feed, and the entire family or if you’re just making for yourself and batch cooking. I opted to have this with rice as well as roti. Which is a west Indian bread. I love that this recipe is super healthy, and a lot of these items I already had on hand. I can’t wait to make this recipe again, it will definitely be on my meal prep rotation.

Coconut Curry Chickpeas Recipe 

Ingredients

  • 12 oz dried Iberia chickpeas (4 cups once cook)
  • 3 tbsp curry powder 
  • 1/4 Green, yellow and red bell peppers 
  • 5 garlic cloves
  • 1/2 onion
  • 1 tsp grated ginger
  • 1 tomato (remove seeds)
  • Few sprigs thyme 
  • 1 whole scotch bonnet 
  • 2 stalks scallion 
  • 2 cups of coconut milk 
  • 1/2 cup liquid from cooked chickpeas 
  • Oil to sauté vegetables 
  • 1 tbsp pink Himalayan salt to cook chickpeas

Instructions
Soak the chickpeas in water for a few hours. Drain the chickpeas, and rinse them, and add them to a pot covered in water and a dash of salt. Cook over medium heat for an hour. Heat the oil in a medium skillet over medium-low heat. Add the onions, cook until translucent. Add garlic, ginger and cook until fragrant for about two minutes. Stir in the curry powder and cook for about two minutes. Pour in the chickpea water and stir. Add cooked chickpeas, and mix well. Add coconut milk, thyme, scotch bonnet, tomato, and bell peppers, season to taste. Stir everything well, and lower your heat to simmer, and cook for about 25 minutes. Serve with your favorite rice or roti.

    This is a good recipe to try. At this time, we need all the healthy food we can get to boost our immunity. I love chick peas and this recipe with coconut and curry looks so delicious!
