Healthy Vegan Orange Chicken

I made orange chicken for the first time on the blog almost nine years ago. It was my first time making a successful Asian inspired dish at home and I was hooked. I was a huge fan of general tso chicken, and I have yet to master that recipe. However, a win is a win, and I totally stumbled upon the best ever organ chicken recipe. When I stopped eating meat. I knew I would totally miss making an orange kitchen at home. It's been almost nine years, and it's finally back on rotation in my home with a twist. This recipe is a healthy alternative to my old recipe, and is sure to be a crowd-pleaser!

 Recipe 

 This is the vegan nugget recipe I used HERE

Ingredients
  • 1/4 cup maple syrup 
  • cooking oil
  • 1 1/2 cup water
  • 4 tablespoons orange juice
  • 2 tbsp. Tapioca
  • 1/4 cup vinegar
  • 2 tablespoons coconut aminos
  • 1 teaspoon garlic, minced
  • 1/2 cup green onions, finely chopped
  • Dash sea salt (optional)

Instructions 
  1. In a pan, put in the water, coconut aminos, salt, vinegar, and orange juice then bring to a boil
  2. Add the garlic and simmer for 5 minutes
  3. Add the sugar and simmer for 3 to 5 minutes
  4. Add the green onions and tapioca (diluted in 2 tbsp. of water) then mix well
  5. Add the vegan chicken on the pan and cook until sauce nearly evaporates.
