Super Easy Vegan Chicken Parmesan & Pasta

I noticed that when making vegan-friendly recipes that I typically focus on appetizers and desserts. One of my all-time favorite meals to have is chick'n parm. What I love about this recipe is that it's super easy to make on a whim, and it's also perfect for meal planning as well. You can also add as much vegan cheese as you would love. Who doesn't love cheese?!
As a mom, I'm always looking for better alternatives for my family. Though I love pasta. I want to make sure that I'm making the best quality pasta for my family. I'm so happy that I got the opportunity to try Tresomega Nutrition’s products. They have so many amazing benefits and I can easily purchase them at my local Sam's Club which I'm super excited about. It also contains high amounts of protein ( Containing all nine essential amino acids ) which is perfect for Vegetarians and Vegans like me. Tresomega Nutrition just makes eating better a lot easier.

Recipe

INGREDIENTS
  • 2 servings TresOmega Nutrition Organic Quinoa Spaghetti pasta 
  • 1 tsp TresOmega Nutrition Organic Virgin Cold Pressed Coconut Oil
  • 2 Boca Chick'n Patties 
  • 1 cup Pasta sauce (more if desired)
  • 1/2 cup Vegan mozzarella and Parmesan  
  • Garnish with Parsley or basil  (optional) 

INSTRUCTIONS 

  1. Warm the pasta until the desired temp on the stovetop on medium high heat, and turn off heat once it reaches temp.
  2. Cook pasta as instructed on the packaging
  3. Add coconut oil to a medium-high frying pan on the stovetop. Once the oil is melted, add chick'n patties until cooked. Flipping once on both sides (this should take about 5 minutes) or until crispy & golden. Once cooked, turn the stovetop to low and the mozzarella and parmesan, and cover until the cheese melts. 
  4. Add the pasta to the plate, add pasta sauce, add chick'n. (add more sauce if desired or toss pasta in sauce prior to platting. )
  5. Enjoy!

  3. Yum, I'll have to give this a try. I do love chicken parm. I'd also give the noodles a try, even though quinoa has frightened me in the past.

  4. We do not eat traditional pasta very much. We have been eating zucchini noodles more often, and we have developed a good taste for them.

  11. This looks like a great alternative to wheat and corn pasta! We find quinoa hard on our systems but I wonder if it would be easier in pasta form!
