Baked Mushroom Rice
Even though I created a meal plan weekly. I was perplexed about what to make for dinner the other day. I went to the store several times and was so caught up on the 90% off after Halloween sale at Target that I forgot all about going to the store and making sure what I picked up the items needed for the menu plan. When Wednesday came around I refused to go to the store. I looked at what I had on hand and the magic started to happen. I wanted to make fish. However, we were all out of flavored rice and the mister loves having dinner with rice. (if you already haven't noticed from my weekly menu plan. )I remembered seeing a video on Facebook. However, wasn't sure if I was going to make it because I really suck at making homemade rice. It's really hit or miss with me. When most times it's a miss.
I ended up deciding to give this recipe a try and boy was I happy. Michael loved it. It was super easy to make and since I was making homemade vegan oatmeal raisin cookies. It really came at the perfect time. The rice came out perfect. It honestly would be the perfect side dish for Thanksgiving or Christmas Dinner. I honestly didn't think that my son would it the rice on his plate and he asked for a second plate with just the rice and mushrooms. The Mister raved about delicious the mushrooms were as well.
I will say that the aroma of this rice had our home smelling amazing! Can't wait to make it again
Recipe
Ingredients
- 1.3 lb mushrooms, quartered
- 3 1/2 tbsp butter, melted
- 3 garlic cloves, minced
- Salt and pepper to taste
- 1.5 tbsp olive oil
Rice
- 1 1/2 cups long grain rice, uncooked
- 1 Chicken bouillon cube
- 1 1/2 cups (dissolve 1 chicken bouillon cube in it)
- 1 1/4 cups
- 1 tsp dried parsley
- 1 tsp fresh thyme
- 1 tsp garlic powder
Instructions
- Preheat oven to 350F.
- Dissolve 1 chicken bouillon cube in 1 1/2 cups of water
- Cube mushrooms by cutting it into quarters
- Place mushrooms in a large bowl. Pour over melted butter, add garlic, salt, and pepper. Toss well.
- Place all the Rice ingredients in a baking pan - 22 x 33 cm / 9 x 13".
- Spread the rice evenly in the pan
- Spread the mushrooms over the rice
- Drizzle olive oil over the pan

This really look very easy to make and very good! And vegetarian so belive me or not, I will try this week! I might add a bit of white!
