Blueberry Orange Muffins Recipe

As you guys know I'm always looking for a healthy recipe for myself and family. Going on a diet it's not an easy task. Especially getting used to eating foods that you typically would dredge with sugar and salt and salad dressing. Trust me, I get it! I have a sweet tooth and getting used to not having six heaping spoonfuls of sugar in my tea or even having iced coffee with a ton of sugar. Has taken a lot of getting used to. I'm always on the hunt to create healthier alternatives to the recipes that I love. I'm a huge fan of muffins and had some on blueberries on hand and couldn't wait to create a recipe using them. I try my best when cooking to not use all-purpose flour and instead use my homemade oats flour. I couldn't wait for these muffins to get out of the oven because they smelled amazing. Trust! They taste even better. I love how super simple this recipe was and I pretty much had everything on hand. Everyone in my home loved this recipe!

Recipe 

Ingredients- Makes 12 
  • 1 cup unsweetened almond milk
  • 1 teaspoon apple cider vinegar
  • 2 cups oats flour
  • 2½ teaspoons baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon Himalayan salt
  • ½ cup tablespoons coconut sugar
  • 1 tablespoon maple syrup 
  • ¼ cup coconut oil melted
  • 1 teaspoon vanilla extract
  • zest of 1 orange 
  • 1½ cups frozen blueberries
  • oats (optional for topping)

Directions 
  1. Preheat the oven to 375F. Line a muffin tin with baking cups and set aside.
  2. In a small bowl combine milk and apple cider vinegar. 
  3. Set aside to allow milk to curdle.
  4. In a large bowl combine flour, baking powder, baking soda, and salt. Set aside.
  5. Mix together sugar, oil, orange zest, and vanilla extract. Add milk/vinegar mixture and stir to combine. 
  6. Stir in the dry ingredients until well incorporated. Be careful not to overmix - a few lumps are okay. 
  7. Fold in blueberries.
  8. Spoon into muffin tins, filling each cup about ¾ full. Sprinkle on 1/2 tablespoon of oats on each muffin.
  9. Bake for 20-25 minutes until a knife inserted in the middle comes out clean.
  10. Remove from heat and allow muffins to cool before removing from pan.

  6. YUMMMMMY!!! Another recipe I must try! I like just about any kind of fruit-nut combination in muffins, but blueberry and banana-walnut are probably my favorites.
