Summer (Project #52) Mexican Corn


One thing I love most about summer is trying new recipes. I tried Mexican corn on the Cobb yesterday for the first time for dinner and paired it with chipotle taco shrimp #Winning. 

I did a combination of two recipes 

Boiled the corn and allowed the corn to cool
Used 1/2 cup of mayo and added a splash of lime juice
Applied the mayo mixture to the corn with the back of a spoon 
Melted butter 1/2 cup 
Drizzled the corn with melted butter
  • Cotija cheese, crumbled (crumbled with hands) it crumbles very easily 
  • Rolled the corn in the crumbled Cotija cheese
  • Sprinkled the corn with sea salt, cumin and cayenne pepper
