White Bean Soup
Prior to becoming a vegetarian, I tried this soup and it was amazing!!! I decided to warm up some garlic bread and add Mexican cheese blend. These meal is perfect for those cold winter days/nights. Enjoy!
WHITE BEAN SOUP
Serves 8 (recipe found on YouTube)
Ingredients
2 tbsp olive oil
1 yellow onion, chopped
2 celery stalks, chopped
1 garlic clove, sliced
2 cans white beans, rinsed and drained well
4 cups vegetable stock
½ cup grated Parmesan
1 tsp salt
½ tsp freshly cracked black pepper
Method:
Heat oil in a large soup pot. Saute onion, celery and garlic until soft.
Add beans, and vegetable stock and simmer for 10 minutes.
Puree soup in batches until smooth. Serve drizzled with olive oil with grated Parmesan ( I used Mexican blend cheese) and freshly cracked pepper.
