Open Sandwich
If you follow me on Instagram I love this recipe. It's perfect for the Spring/ Summer (when the ingredients are in season) time or anytime you have these ingredients on hand.
Ingredients this makes (four open sandwiches)
2 tablespoons Olive Oil
2 garlic gloves ( minced)
1 Avocado
1 cup of Cherry tomatoes
Cayenne Pepper
Sea Salt
Bread
(the prep for the garlic, tomatoes, avocado can also be done prior to turning on the stove)
I start off by drizzling your skillet or pan of your choice with olive oil on medium. Add two garlic gloves minced, and cook until the garlic is soft ( not brown) if you notice the garlic is starting to turn brown remove from the heat and lower the heat. Slice all of of the cherry tomatoes in half. Add to the pan with the garlic cook until the cheery tomatoes are lightly cooked and not mushy. Slice the Avocado as pictured above. Toast the bread and add the avocado, tomato mixture, then litely sprinkle with the salt then sprinkle the cayenne pepper and serve.
I originally tried this recipe at a business meeting and I feel in love. If you haven't noticed I try to recreate meals that I love. This recipe is excellent paired with your favorite wine!
