Homemade Caramel Popcorn

Hey everyone, okay so I have been making a couple of different baking recipes, and I can’t wait to share them. Yesterday while on my way home. I finally remembered what my YouTube account information was, and I was able to log into my account. I had no attentions on making homemade caramel popcorn. Once I watched the video and saw how simple it was to make, I ran in the house and started the process. The original video I watched was made with homemade popcorn. I had NO intentions on running to the store so I made this recipe with the microwavable popcorn that is pre-packaged… Let’s just say that the popcorn did not make it into the oven. It was so delish!! I plan on making this recipe again today very soon. I honestly cannot tell you if my family enjoyed this treat. I pretty much ate a good portion of this caramel popcorn.
PS. Also, I will probably double the caramel sauce for this recipe. If I am unable to fully cover the popcorn the next time I make this recipe.



Recipe:
  • 5 Tablespoons of butter
  • 1/2 Cup of brown sugar
  • 1/4 Cup corn syrup
  • 1 teaspoon salt   (I did not use salt, I used salted butter. Plus the popcorn was salted)
  • 1/2 Teaspoon baking soda
  • 1 Teaspoon vanilla extract
  • 8 cups of popcorn (I used microwaveable popcorn)

Directions
  1. Preheat oven to 250 degrees. Place popcorn in a very large bowl.
  2. In a small saucepan over medium heat, melt butter. Stir in brown sugar and corn syrup. Bring to a boil, stirring constantly. Boil without stirring 4 minutes. Remove from heat and stir in baking soda and vanilla. Pour in a thin stream over popcorn, stirring to coat.
  3. Place in two large shallow baking dishes and bake in preheated oven, stirring every 15 minutes, for 1 hour. Remove from oven and let cool completely before breaking into pieces.

  3. My girlfriends made this while I was visiting her in Ohio this year. All I can say is...OMG! And she made two batches, one with almonds and one without. I ate until I was literrally embarassed! It was sooooo good!

    She also used microwave popcorn. Thanks for sharing!

  5. I love caramel and/or toffee popcorn, but I have to stay away from it because when I buy a box I can eat it in one day (if I allow myself to), LOL!! But I have always wanted to try to make my own caramel popcorn and with the weather getting ready to change this is right on time with Fall!!
