Jamaican Porridge

Happy Wednesday Everyone!

My little guy has been in school officially for an entire week now It really is bitter sweet. Once school starts back it officially means fall is right around the corner. It has been relatively warm this summer I have been enjoying every minute of it. Anywho… my little guy loves homemade breakfast. He really does not care for frozen breakfast treats like French toast or pancakes, he loves semi fresh meals. This summer I tried to make one of my favorite Jamaican breakfast treats to prepare for fall and winter. I grew up eating porridge and I truly love all of the different variations. I actually tried making a similar recipe to this before and it really did not come out right at L So I decided to give it another try. I guess the second time was really the charm. I have been whipping up a batch at least once a week. It is super easy to make (as long as you follow the directions) plus you can store left over’s in the fridge for the next day! We really have not had much left overs. Once it starts to get a little colder outside I will start to make a larger batch to put into small portions in microwave safe bowls for my little guy in the morning, and me too.

Cornmeal Porridge via

Recipe (serves 4-6)
 
1 cup Yellow Cornmeal (coarse or fine)
4 cups Water
¼ cup milk (or coconut, almond or soy milk)
½ cup Sweetened Condensed Milk
2 tbsp. Sugar (or honey) sweeten to taste
¼ tsp. Nutmeg (ground)
¼ tsp. Cinnamon (ground)
Vanilla Flavoring (2 drops)
 
Add cornmeal to a bowl, and then pour enough water into the bowl to cover the cornmeal. Use a fork to mix the cornmeal in the bowl to let the water and cornmeal ( mix loose and watery).
Bring the 4 cups of water to boil in a saucepan. Turn the heat to medium.

Slowly pour the water and cornmeal into the saucepan while stirring with a metal whisk. You will have to stir the mixture continuously for about 3 minutes. (If the porridge starts to splash turn down the heat) Cover the pot and let simmer for about twenty minutes. Occasionally stirring the mixture in the pot.
 
Turn off the fire but do not remove the pot from the stove. Now add all the ingredients and mix together, except for the nutmeg. Serve in small bowls and sprinkle with ground nutmeg.

  1. This looks very similar to the Farina that we eat. It's pretty much made the same way, minus the cinnamon and nutmeg. Hope your son has a great school year.
