Vanilla Cupcake with Chocolate Frosting

I hope everyone had an awesome weekend! Yesterday, I was reading a post by Mrs. Chic at Chic Little House, and she was sharing her awesome creations from her sons first birthday party. I was just in all with the cupcakes she made, and decided I was in the mood for cupcakes with chocolate frosting. I never made chocolate frosting before, so I decided to do a little research on the how-to. I came across these two recipes below. One for frosting an the other for an actual vanilla cake. Both recipes were super easy to make. I actually just got finish making them, and I could not wait to share with you guys. ENJOY!


Chocolate Frosting Recipe: Recipe Adapted from via

Ingredients
  • 6 tablespoons butter
  • 4-5 tablespoons evaporated milk
  • 1 teaspoon vanilla extract
  • 2 3/4 cups confectioners' sugar
  • 6 tablespoons unsweetened cocoa powder

 Directions

1. In a medium bowl, sift together the confectioners' sugar and cocoa, and set aside.
2. In a large bowl, cream butter until smooth, then gradually beat in sugar mixture alternately with evaporated milk. Blend in vanilla. Beat until light and fluffy. If necessary, adjust consistency with more milk or sugar.



 Vanilla Cake Recipe: Recipe Adapted from via
  • 1 stick butter (room temp)
  • 1-tablespoon vanilla extract
  • 3 large eggs (room temp)
  • 2 1/4 cups all-purpose flour (do not sift the flour)
  • 1 1/2 cups granulated sugar
  • 3 1/2 teaspoons baking powder
  • 1-teaspoon salt
  • 1 1/4 cups milk
  • Vegetable oil

Preheat oven to 350°, Insert cupcake liners in the cupcake pan.
In a large mixing bowl combine the flour, sugar, baking powder and salt, mixing well.
Measure the 1-1/4 cups of milk in a 2 cup measuring cup then add enough vegetable oil to bring the liquid up to 1-1/3 cups.
Add the milk/vegetable oil mixture, butter and vanilla to the flour mixture and beat with an electric mixer on medium to medium-high speed for 2 minutes, scraping sides of bowl as needed.
Add the eggs and continue beating an additional 2 minutes. Pour batter into prepared pans.
Bake at 350° for 20 to 25 minutes or until a wooden pick inserted near center of cake comes out clean, or until cake springs back when touched lightly in the center.
Cool cup cakes on wire racks for 15 minutes; remove from pans and cool completely.

  2. Those cupcakes look GOOD! I love how you piped the frosting your a pro! I have yet to master that, so for now i'm using my off-set spatula or a teaspoon. I so need to try chocolate frosting, when I do I'll use your recipe!
