Homemade Sweet Potato Pie

by - 10/27/2011 07:26:00 PM

(This picture does not do this pie any justice!)

As a child, my mother and great grandmother made sweet potato pie around the holidays. This is one of my favorite desserts that I have mastered. Once I learned how to bake, I was on a mission to learn how to make this dessert like my family. After several tries, I had it! This is my go to pie. Especially since I am the only one making this pie in the Spring and Summer time (in my immediate family). My step daughter and I even share the same love for this pie ( I am in the process now of giving her the basics of baking). This is my go to pie when I want something fast and simple. I make this pie so much that I no longer have to measure the ingredients :) and it usually comes out so good that the pie only last a day or so. I'm still on a mission to learn how to make my great grandmother's homemade peach cobbler. But for now, I’m happy with my pie.

recipe adapted from

Recipe

Ingredients:
  • 4 ounces butter, softened
  • 2 cups cooked and mashed sweet potatoes
  • 2 cups granulated sugar (sweeten to taste)
  • 1 small can (5 ounces, about 1/2 cup plus 2 tablespoons) evaporated milk
  • 1 teaspoon vanilla
  • 3 eggs, beaten
  • 1 1/2 teaspoons cinnamon
  • 2 prepared pie shells, unbaked

Preparation:

Mix butter, potatoes, sugar and evaporated milk until well blended. Add vanilla, eggs, and cinnamon; mix well. Pour into the prepared pie shells. Bake in a 350° oven for about 1 hour, until set.
Makes 2 pies.

Do you have a go-to dessert?

The pie pictured lasted under 24 hours, LOL. Red velvet is one of my favorite cakes! I make red velvet cake from scratch. I can imagine how your Granny's taste!

  4. I will give your recipe a try for sure!! My daughters loved my Nana's sweet potato pie and she passed away in July. I never cared for them, so I didn't learn to make hers. I think this will make them happy! My go-to dessert is my pineapple cheesecake or pumpkin cupcakes with a maple cream cheese frosting.
