Vegan Maple Pumpkin Scones

I was so apprehensive about making this vegan scone recipe. To be honest. All of the scones I’ve had were super hard, and honestly didn’t feel was worth making. I had a can of pumpkin puree that I was going to use for a pumpkin pasta recipe. However, I’m horrible at times when opening something and forgetting that it’s in a storage container in the refrigerator, and a lot of times, I forget about freezing it. 
I’m so happy that I gave this recipe a shot. It’s so good and doesn't require too much time to make. I drizzled organic maple syrup on these bad boys out of the oven, and they were so good. I can’t wait to try other scones recipes!

Vegan Maple Pumpkin Scones


Ingredients
  • 2 cups whole -wheat flour
  • 1/2 cup Almond Flour
  • 1/2 cup, and 3 tablespoons pumpkin puree
  • 1/4 cup maple syrup
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon Himalayan salt
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 3/4 teaspoon ground ginger
  • 2 flax eggs
  • 1 1/2 teaspoons vanilla extract

Instructions
  1. Preheat oven to 400°F.
  2. Mix together dry ingredients in a large bowl.
  3. Add, maple syrup, flax eggs, pumpkin puree, and vanilla - mixing as you go.
  4. Combine until you have a thick dough
  5. On a floured surface, form dough into a circle that is roughly an inch deep all around and cut into 8 pieces, just like you would a pizza!
  6. Place separated slices onto a silicone baking mat.
  7. Bake for 12 - 15 minutes.
