Cucumber Lemon Ginger Juice

Last year while visiting the Mister's family in New York. I tried fresh cucumber lime juice for the first time, and I was hooked. Of course, I could not wait to get home to try and recreate this refreshing beverage. Not only is this juice delicious. It's actually good for you, and super easy to make. What I also love about this recipe is that you can batch make it beforehand hand any freeze it, in freezer safe containers. Especially with spring and summer right around the corner. This is the perfect refreshing drink to have on hand. I actually prefer not to strain this drink. It's completely optional if you do though. I also leave the skin on the cucumber. When it comes to sweetening this beverage. Use what sweetener works for you. I used honey, many people use regular sugar or maple syrup.

Recipe

Ingredients 
  • 1 Medium Cucumber (cleaned and chopped)
  • Sweeten to taste (honey)
  • Juice of half of a lemon
  • 4 cups of water
  • 2 tablespoons ginger 

Instructions 
Combine all ingredients in a high powered blender. Blend until combined. (strain: optional) enjoy over a cup of ice.
