Bagels with Smoked Salmon, Capers and Red Onions
I love super simple Spring/summer recipes that are good for breakfast and/or lunch. While at an event I saw someone enjoying this delicious treat and I knew I had to try it. While at the grocery store yesterday, I picked up all of the items and today was the day! I love how super simple this recipe is as well as being delicious. The next time I plan on using vegetable cream cheese and possibly adding slices of tomatoes as well. I think this is my new summer go to recip.
Ingredients:
2 Bagels ( used wheat) I toasted the bagels-optional
1/2 tablespoon of Capers ( for each bagels- this is optional)
Red Onions (As much as you like- try to slice them thin)
1 package of cream cheese ( I used plain. However, vegetable works great as well)
Slice the bagels in half horizontally and spread 1 tablespoon of the cream cheese over the bottom half of each bagel. Arrange 2 slices of smoked salmon over the cream cheese, add red onions and 1/2 tablespoon of capers to each bagel and place the remaining bagel halves on top. ( you could also enjoy this as an open sandwich like I did. )
