Menu Planning
Hey Ladies,
So I’m still menu planning, as much as I can now as days... In
my home, it feel as if everyone has their own menu. Mini me still eats pork and beef,
the Mister eats fish and Poultry and I’m a vegetarian. So as you could imagine.
Grocery shopping becomes very interesting. I try to simplify all of our meals as much
as possible. So this week, I created breakfast meal prep for everyone (I usually only create one for dinner). I made
wheat banana muffins for myself, pancakes for mini me and egg muffins for the
mister.
Everyone’s is in their own container. So all we have to
do is grab and go!
Muffins-I used this recipe HERE for the muffins (my substitutes: I
used coconut milk, Canola oil, and no egg) I also added dry oatmeal to the top
prior to putting them in the oven.
Egg Muffins- I used this recipe HERE as inspiration. (I do not scramble the egg first, I just drop it in the muffin pan. This week I added my favorite seasonings, mozzarella cheese, and broccoli.)I'm not perfect, yes I over cook/burn pancakes too, LOL :)
I’ve learned that menu planning is a great way to ensure
that I’m eating healthy and a great way to have time management. It’s so easy
to stop at a fast food restaurant, due to not having dinner prepared or nothing
to eat for breakfast in the morning.

Menu planning is a HUGE money saver for us. We plan a week or two on a calender and then shop for only those ingredients all in one trip. Then we HAVE to eat it because that's all we bought :p Thanks for sharing! The egg muffins look fantastic.

My hat is off to you for feeding a multiple menu family! I used to do menus back in the day but now with just me and my husband, (who thinks I am the worst cook ever, simply because he thinks he is best at everything), it isn't necessary anymore! But back in the day with the kids and them in school etc...and before microwaves and frozen foods.. I did everything from scratch and made my own frozen meals for them for after school and dinners. I did enjoy doing that tho!
