Homemade Chicken Pot Pie

Last week while grocery shopping, the Mr.  had the bright idea to make homemade  chicken pot pie. I have never had the homemade version before. Growing up my mother always purchased the frozen kind (you know I am always up for the challenge to make new recipes).  This was supposed to be my husband’s creation for dinner on Saturday. However, due to a really busy weekend we did not get the chance to make this dish until Monday night. I was really worried about this recipe. All of the “what if’s” started to come to mind once the pot pie was done in the oven, we made a quick trip Bj’s and the Mall, and once we arrived back home. It was time to settle down and eat dinner. I had the first bite, and I knew I had to share this recipe with you guys. It was just perfect. This recipe was a big hit in my home. My tween even loved it (He can be such a picky eater at times).  This meal is super easy, and probably could be added to my freezer cooking list. Well, without further ado. Enjoy!

Ingredients

1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon celery seed
1 3/4 cups chicken broth
2/3 cup milk
2 (9 inch) unbaked pie crusts
1 pound skinless, boneless chicken breast halves (cubed)
1 cup sliced carrots
1 cup frozen green peas
1/2 cup sliced celery
1/3 cup butter
1/3 cup chopped onion
1/3 cup all-purpose flour


 Directions

1. Preheat oven to 425 degrees F
2. In a saucepan, combine chicken, carrots, peas, and celery. Add water to cover and boil for 15 minutes. Remove from heat, drain and set aside.
3. In the saucepan over medium heat, cook onions in butter until soft and translucent. Stir in flour, salt, pepper, and celery seed. Slowly stir in chicken broth and milk. Simmer over medium-low heat until thick. Remove from heat and set aside.
4. Place the chicken mixture in bottom pie crust. Pour hot liquid mixture over. Cover with top crust, seal edges, and cut away excess dough. Make several small slits in the top to allow steam to escape.
5. Bake in the preheated oven for 30 to 35 minutes, or until pastry is golden brown and filling is bubbly. Cool for 10 minutes before serving

  2. Love chicken pot pie! Its so easy once you get use to making it. I just throw a bunch of stuff in mine and bake it. Easy peasy. Yours looks yummy!

  3. Sounds delicious! I've never tried to make mine with a crust like that, we usually have a biscuit like crust on top or eat the pot pie filling over a southern biscuit. It's always nice when the tweens and teens like the food, makes meal time a lot more pleasant. :)

  4. Oh that has to be soooooo good. My hubby and I were just talking, the other day, about how much we use to love pot pies as kids. I think they are awful now. They make them so cheaply.   10. I had never made chicken pot pie until a few years ago (I too normally had the frozen kind). Now I will never go back to store bought! Your recipe sounds delicious! I like to add some thyme to mine... I love thyme in it!
